However, there are many other great ways to use almonds in the kitchen. For example, you can try making this incredible cauliflower and almond soup with spices:

Ingredients:
  • 1 liter chicken (or vegetable) stock
  • 1 teaspoon olive oil
  • 1 onion (large)
  • 1/3 cup almonds
  • 1 cauliflower (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon harissa
  • Salt and pepper to taste
Instructions:
  1. Fry onions and almonds in the olive oil for a couple of minutes in a large pan.
  2. Add cauliflower, stir, and add the spices. Stir again.
  3. Pour the stock into the pan and bring to a boil.
  4. Let the soup simmer for about 20 minutes.
  5. Puree the soup with a stick blender and serve hot.
