  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • ¾ cup chocolate chips (vegan)
  • 1 cup chopped macadamia nuts
  1. Whisk together ground chia seeds and water to make a vegan egg substitute or use any other option. Set aside for the ‘egg’ to gel up.
  2. Stir together vegan margarine and sugar and mix thoroughly until smooth. Add salt, vanilla extract, and gelled chia ‘egg’. Mix some more.
  3. Gradually add gluten-free flour and baking soda and mix to get a nice cookie dough.
  4. Add macadamia nuts pieces and chocolate chips.
  5. Scoop the dough onto a baking sheet lined with oiled parchment paper.
  6. Bake your macadamia nuts cookies in a pre-heated oven at 350F. This should take about 15 minutes, depending on the size of cookies. They are ready when the edges turn golden but the middle hasn’t set yet.
  7. Let cool for at least 5 minutes before removing from the baking sheet.
