I admire Pilcher's work. He is a good, original scholar. But this seems to be a hastily prepared book for a market that desparately needs a panoramic text on this subject. Unfortunately this is just too light in the coverage. I don't get the sense of real exploration of the subject that characterizes his work on Mexico. I was hoping this might serve as a course text but there's not enough meat.

I only purchased this because we used it in a food history class but it was an extremely hard read. I ended up not even reading it when I realized I didn't need it for the quizzes. Wouldn’t recommend unless you are a very strong reader, I’m in a bachelors program that required a history class and it definitely wasn’t a 100 level course reading.
