The FM2100-000 is an all plastic version. After using the other sturdier model, it feels flimsy as if it will break after a few uses. I used the other model mainly for packaging fresh deer and boar meat for hunters and fresh fish after the catch was cleaned and scaled--the machine got a lot of use for long periods of time--and would shut off when it got too hot--but it never failed. The meat never got freezer burn and was easy to store. I do not think that the FM2100-000 would last very long under these circumstances.
I had a difficult time sealing "juicy" foods. My experience sealing the remainder of a lemon lasted way too long to make using this machine for such things even vaguely relevant. Once the machine started its process to suck out the air, it never turned off and I ended up forcing the seal because I did not want to waste any more time on it. After a few attempts with different foods of different consistencies, I found that the machine worked best with harder items. It is possible that this FoodSaver is malfunctioning as I did have to force the seal a number of times--that was not part of my experience with the other FoodSaver.
Because this FoodSaver is less sturdy, storing it for me is a problem. I would not have this unit out on my countertop as I do not have a large enough area to support many appliances. I would purchase this type of unit--and I would invest in a more expensive version that included the plastic container with the air valves--only if I were to use it in the hunting/fishing camp situation I described above. A large family buying in bulk might make use of this, but for the average kitchen? My leftovers fit nicely in a glass bowl covered simply with some wrap. The everyday use of this machine, for me, is overkill.
Bottom line? After using a more expensive model of FoodSaver, I found this model lacking. The air seal never worked and most of the time I had to force the seal. As I believe this to be a malfunction, for the price, this version of FoodSaver could work in a kitchen with lots of leftovers. I do not think that it is sturdy enough to withstand heavy-duty use at a fishing or hunting situation. Recommended only for minimal use.

- place bag and contents level with the machine opening, saving some length on the bag if using a roll you have to cut
- freeze items that have liquid before sealing - if not frozen, the water can be sucked up and result in a bad or incomplete seal
I've been using the pre-cut bags and sealing the very top of the bag when possible. I'm planning to wash and re-use the bags that currently have vegetables in them (reusing bags that have raw meat or oily foods is not recommended by FoodSaver as cleaning may not remove all bacteria or they may be hard to clean).
I've not had any issues with vacuum sealing any bags so far. I'm pretty happy with this purchase.
It takes a lil time to figure out but once that curve is tackled everything vac sealed my friend are jealous and want one too
