This is a finishing salt not to be used in regular cooking. It is what it says it is. Finishing! For one thing, unless you are among the Uber rich, then you cannot afford to use it indiscriminately by the teaspoonful. And when used properly, it only takes a small pinch sprinkled on top of grilled fish, steak, over a fresh salad and my most favorite use is to sprinkle a bit over decadent home made chocolate ice cream. Surely an unbelievable taste experience.
Another use I have for it is to sprinkle lightly over the top of a loaf of homemade bread before it bakes. I only use this on the recipes that make a crusty chewy loaf, such as many of the artisan bread recipes that are so popular today. That little surprise pop of Fleur de Sel is definitely worth trying. Another observation I've made is that it is best used on pure food. By that I mean a piece of plain grilled white fish, a non-marinated steak over the grill, chilled watermelon (mmmm good) or chicken that has no other seasoning. The taste experience of the few grains of salt in combination with the food is eye closing wonderful.
This salt comes in a very small plastic jar. Wish it were glass but still yet, it's good. It comes slightly moist. This is not an error, that's just the way it is. The grains are larger than table salt but not as large as many of the raw salts found on the market today. . It's produced in France in drying pools that are then worked and harvested by individuals, usually with no machinery. The packing is also done by hand, a jar at a time. Yes, there will be the occasional off color in some of the grains but this is only natural.
But before judging this salt, please do as I did and try a variety of sea salt before trying this one. I don't think you'll be disappointed and it will probably open up a whole new field of exploration on the different kinds of salt available.
This is a great salt to keep handy: I use it much more frequently than I thought I would. It's relatively pricey, but for applications where nuance is key it's fantastic.

When I first opened the container... I decided to try a bit of the salt plain. Table salts, and all the previous sea salts I have ever tried have always been bitter and repulsive plain, so I thought this would be a good win/lose test. I put a few grains on my tongue... and instantly was amazed. The salt lives up to all of the great descriptions! Far from being repulsed, after experiencing the gentle saltiness, and blooming of salty flavors I never knew possible... I wanted more plain salt! I resisted the urge however... and decided to put some salt onto one of my favorite snacks, edamame, which desperately needed an awesome salt companion.
EDAMAME CLOUD 9! Seriously. The edamame with Fleur de Sel made me want to run to the salt container and dip in my tongue! SOOOO GOOD. Can't wait to try this on caramel candies!
I was uncertain at first, but now I am completely confident that they will be awesome!
(I'm not saying this is the best brand out there... if you read my post you will be able to deduce that this is BY FAR the best salt I have ever experienced... thus I have no knowledge of salts that may superior to this, but I really can't imagine it getting better.)
Last night, my son and I sauteed some bananas and pecans in butter, then topped them with some cajeta (Mexican caramel) and a sprinkle of Fleur de Sel. Again, mind = blown. It's hard to articulate how positively this will impact your food, but after you taste one of your tried and true recipes with the addition of Fleur de Sel, you're going to think that you could open a restaurant.
This stuff is truly magic!
