I’ll tell ya how much I like this recipe book. It is a replacement for the one my mom gave me back in 1973. I’d started deviating from the recipes because of old age laziness and realized that I needed a copy that wasn’t falling apart as I tried correct these issues.

I learned of this book when it was referenced in several contemporary books on cajun and creole cuisine. Since it was referred to by so many different sources I knew I had to get a copy. The writer provides great background information on all the various dishes. His personalization of the various dishes is unusual, but very enjoyable. This 40 year old book can stand the test of time. If you search out this book try to find a copy that has the separate spiral bound recipe book. You'll be glad you did.

I like the book as it has interesting history of both Creole and Acadian foods. I was disappointed though as the book that I ordered did not come with the cookbook which is really what I wanted. Check to make sure it comes with the cookbook!

I have had this cookbook since 1972. My spiral recipe booklet is so used it was falling apart. Being from New Orleans and considered by friends and family as an excellent cook, initially I was septical of using any cookbook. Over the decades, this is my most cherished resource for producing dishes that are perfectly seasoned and wonderfully balanced flavors. So after almost 40 years I am getting another cookbook and orders one for my adult daughter.

This World Cooking series by Time Life is both a good read regarding the history of the region or country, and also provides many recipes of the region or country.
