This recipe book has got to be one of the best recipe books ever. And I mean - the instructions are exactly on point. If the book says you'll fry onions for 15 minutes, you'll fry them for 15 minutes. I love to cook, and nothing gets under my skin more than recipes that say "fry an onion for 2 minutes until golden" and you KNOW that it takes at least 15 minutes to have a golden fried onion, and then in reality, you spend 15 minutes instead of 2 minutes as the recipe called for. So, with this book, it says 15 minutes, it's 15. It says 2-3 minutes, it's 2-3 minutes. I love it. All quantities are also exact. I've made a lot of recipes from this book already, and they have all been 100% on point. Meera Sodha has got to be simply the best recipe writer.

The recipes themselves are delicious and fairly easy to make (probably too complicated for a person who only knows how to boil an egg, but if you've done an entree before, then you'll be able to follow these recipes just fine). That said, this is an Indian cookbook, so you'll need the spices (and a spice grinder to make it really top-notch) to make these dishes. This cookbook also has recipes on how to make things like paneer (cheese) from scratch or make your own spice mix (garam masala), and I've done both, and it was incredibly straightforward. I'm amazed that I managed to make my own paneer, and it's all thanks to this book.

Lastly, the author lives (and was born) in the UK, and she has a Western understanding of ingredients (i.e. limit the butter, etc). In her recipes and the short notes above each recipe, she explains how she deviates from the traditional recipes, if she does, and I like her honesty and her humor.

If you want a great book on Indian cooking, get this one. It is one of my favorite cookbooks of all time, and I have a hefty collection of cookbooks.

I absolutely love this book. Firstly, it's beautiful. Which who doesn't want a beautiful well crafted cook book with colorful vibrant pictures? Secondly, the set up of the book is delightful. Meera gives nice anecdotes to go with each recipe and chapter and explains things with grace and ease.

Secondly, I love her 10 tips and insights at the beginning. (Particularly the piece about practice practice practice and that not all chiles are created equal. TRUE.)

Thirdly, I've found that the recipes are easy to veganize (for all my fellow vegans out there). The recipes are more straight forward and less complex compared to Vegan Richa's Vegan Indian cookbook, which is nice for weekday cooking.

Finally, and I suppose most importantly, everything I've made is delicious, flavorful, not too heavy, and a real crowd pleaser. I cannot wait to continue cooking my way though this book! Thank you Meera for sharing your delicious goodness with us all.

I was a HUGE fan of Made in India, so eagerly awaited the US publication of her follow up. And so far, it's been great. I made the tamarind eggplant curry, and grilled cabbage with coconut, both excellent. Being that eggplant is a favorite of mine, I was excited to see an entire chapter dedicated to eggplant. I like the organization of the book, breaking things down by main ingredient. Overall, I highly recommend both this and Made in India (which has meat recipes if you're into that).

My new favorite cookbook

I bought this as a Christmas present for myself and have cooked at least a dozen dishes since I got it, which is a testament to how good the recipes are. I did make a trip to the Indian grocery store for whole spices, tamarind sauce, curry leaves and lime pickle but it seems like most recipes could be made with ingredients purchased at any grocery store.

I find these recipes relatively simple, and - most importantly - consistently delicious. They're not all vegan (f that matters to you) but many of them are. Even if you have other Indian cookbooks, this is worth adding to your collection for Sodha's well tested recipes, beautiful pictures, and modern takes on old favorites.

Be sure to try the Temple Tomato Rasam, the Pumpkin, Black-eyed Pea and Coconut Curry, Teresa's Mango Salad, and the Goan Squash Cafreal!

Hard and unhealthy recipes

These are supposed to be "easy" recipes, but I don't consider recipes easy when you have to cook two or three for a meal. Most of these dishes say serves 4 "as part of a main course", and recommends a rice and bread or another dish to cook at the same time. Realistically this is too much for me to accomplish consistently. And not that the book claims to be healthy, but the elephant ear naan for 5-6 people uses a half cup of better (which is one stick of butter) and white flour. If I'm eating at home I want healthy meals. There aren't suggestions for healthier approaches. I love Indian food in restaurants but will need to buy it until I can find a more approachable cookbook.

The recipes are exquisite, ranging from simpler fare to complicated. The photos are lovely. The heart beats right off the pages. I promise you, you'll read the book as you would any enjoyable piece of writing. As you prepare these dishes, you'll come away with the author's voice in your head. I fell hard for this one, so much so, that I bought it twice, once for my own kitchen, and again for my son and daughter-in-law. I will likely order more copies to give as gifts to other kitchen dwellers. Lovely journey.

A wonderful book! I have tried many recipes now and am very impressed - simple to follow, not hard to get ingredients and all dishes come out yummy. One major thing though - the author uses way too much salt for my taste. I have discovered this after making my first rice dish it was almost inedible, way too salty but the flavour was beautiful, so I did it again with 1/3 of the amount suggested. Perfect. After, I just use the amount of salt that I decide would be suitable for all the recipes. However, it is just my personal opinion. Highly recommend this book.

I'm a bit of a carnivore but have found this book great! Both of us have found the recipes really easy to put together, delivering fresh and tasty veggie dishes that don't end up feeling like a jumbo side-dish, like some other books we've tried.

The book isn't trying to replace meat, in any way, but just seems to put together some substantial vegetarian recipes that you could easily substitute meat into, if you so wished, however we've really enjoyed all the veggie options we've tried to date. Biggest win, so far, have been the mushroom and chestnut samosa that taste 'meatier' than the meat versions we've tried making in the past and packed with bags of flavour.

Since we bought it, the book has been in use so much that I've gifted another couple of copies to friends and picked up the meat book.

As soon as this book arrived, I went through every recipe and put a page sticker on each one I wanted to try - and there were many!! Tonight I have cooked first recipe which was the roasted vegetables with a madras sauce. The recipe was very easy to follow and the result was near perfection. One of my favourite sauces at my local indian restaurant is madras but I have never managed to successfully recreate at home. If this had been slightly hotter, it would have been perfect and as good as my local restaurant! Just needs a little tweak - and I know where to tweak it! The recipe included fresh ginger and I substituted ginger from a jar. Next time I will use fresh ginger. We have a traditional Indian restaurant nearby and a fusion Indian restaurant. At the fusion restaurant, they do a muslam sauce. I have never been able to find this sauce despite all my googling! However, there is a recipe in this book for a mussalam sauce. I am hoping this is going to be similar. There are so many great recipes in this book and the best vegetarian one I have ever found. Happy days ahead!!

Update: have tried 3 of the recipes now and each one has turned out perfect. Yesterday i made the butter masala paneer curry- beautiful lovely flavours, and also the Hill station salad - again lovely vibrant flavours and so simple to make.

I was not a great lover of Indian food, my only experience being via Indian restaurants in the UK. However, I am looking forward to a holiday in India and thought I should investigate the food a little more.

This book is a wonderful introduction to Indian cookery, practical, with sensible and accessible ingredients, well written and the recipes really are delicious and nothing like the tasteless, over spiced food you seem to get in the majority of the UK restaurants.

I enjoyed the book so much I bought her other book "Made in India" and that's excellent too.
