I love fried chicken so of course I purchased FRIED AND TRUE. There are enough variations of fried chicken in this cookbook to last a good long time.

I do wish I had purchased the hardcopy rather than the Kindle version in this case. The pictures are small on the Kindle and I'd like to be able to see them full-size.

Another small minus: the captions are switched on a few of the pictures but it's easy to figure out which caption goes where.

The recipes mostly come from the South, with a few on the West coast. I would have liked to have seen some from the Midwestern states or more of the Heartland. I know of at least two GREAT chicken places in the Denver area - Wishbone Restaurant around since 1963 and White Fence Farm around since 1973.

If you love fried chicken in all its variations, this cookbook is for you. And I like, that for the most part, the ingredients are easy to find. There are a few more exotic recipes and the book lets you know where you might find the ingredients.

This month I was fortunate to obtain an awesome Cookbook which had me in the kitchen checking my available ingredients within the hour of receiving it! Although I consider myself a pretty decent cook, my Northern roots always leaves me wondering what is the best Fried Chicken recipe and where can I get it ? Having never traveled down South, I depended on others and the cooking shows to lead the way. The book "Fried and True" by Lee Brian Schrager and Adeena Sussman immediately transport you down to Georgia, New Orleans and beyond...all the way to Senegal! Expecting great recipes from the deep South was a given. Realizing that Fried Chicken is enjoyed in other areas outside the United States, not so much! In this book, which is not encylopedic in size, it packs a punch with 50+ great recipes. It is big enough! The recipes are clear and concise, ingredients listed are readily available in most local markets and the illustrations will have you wanting to stock your freezer with Chicken, Chicken and yes even more Chicken!

If you like Buttermilk, it is in there. If you want an Asian flair, you get it. There are even recipes for a few restaurant chain favorites! You also will get some biscuit, marinades, coleslaw, and salad recipes to pair up with these favorite dishes. How cool is that?? My goal is to begin with recipe #1 and keep it going till I reach the last page. After all, can a girl really get too much Fried Chicken?? Try this book, your family and friends will love you!

This book is so much more than I imagined. Fried Chicken from many of the greats including Wylie Dufresne Popeye's Style Chicken and biscuits, Charles Phan, Tyler Florence, Keralan Fried Chicken with Lowcountry Cardamom Waffles...Coconut Fried Chicken..Hawaiian Fried Chicken...Mary Mac's Tea Room Fried Chicken and Tomato Pie -- General Tso's...and wings..sides...I really am impressed with this book.

I made the Senegalese fried chicken this weekend and it was incredible. There is something for everyone in this book. I recommended it in my Cookbook Junkies group on Facebook and several people purchased it and loved it as much as I did.

Let me just start out by saying “O.M.G.”. This book is beyond words and I highly recommend it to 3 groups of people. Those who love fried chicken, those who love eating fried chicken, and those who love reading about fried chicken.

I’ve made it no secret in the past (and for those who follow me on social media you know this to be true) that I LOVE fried chicken. LOVE – in all caps! It brings me back to my childhood and brings memories to me that no other food ever has or ever will.

Whoopi Goldberg writes the “foreword” for the book, and I now love her even more. Ha! Seriously – she writes about fried chicken as only a true lover of fried chicken would…and she’s a self proclaimed one.

The book is MORE than just fried chicken recipes though! There’s also recipes for side dishes such as “Fried Green Tomatoes” (page 43), “Hash Brown Casserole” (page 61), “Old-Fashioned Coleslaw” (page 70), “Cheesy Garlic Grits” (page 101), “Corn Bread Sticks” (page 130), and “Baked Beans and Barbecue Sauce” (page 142) just to name a few! Each and every side dish (and buttermilk biscuit) recipe pairs perfectly with any of the fried chicken recipes.

What kind of fried chicken? You name it!

Included in this delicious book are recipes for “Hattie B’s Hot Chicken” (page 45), “The Loveless Cafe’s Fried Chicken” (page 60), “Naked Fried Chicken” (page 67), “Sunday Night Fried Chicken” (page 88), “Hard Fried Chicken” (page 97), “Sweet Tea-Brined Fried Chicken” (page 147), “Kick-Ass Batterless Fried Chicken” (page 204), and even recipes for specialties such as “Fried Chicken Salad” (page 222).

In "Fried and True: More than 50 Recipes for America's Best Fried Chicken and Sides" by Lee Brian Schrager with Adeena Sussman there's a little something for everyone!

Really, who doesn't love fried chicken? This mouthwatering book is sure to appeal to cooks of all ages and expertise levels. The book begins with a chapter entitled "Fried Chicken 101" which is basically an introduction to cooking fried chicken. This is wonderful for someone like me, who has never made homemade chicken in her life! It explains the definitions of Brining, Deep Frying, Skillet Frying, and Seasonings as well as many other important necessities to get started with. It explains what tools you need at home to begin your deep frying experience! What I also thought was unique to this book, was an introduction on how to cut up your own chicken.

The chicken recipes are put into one of three categories in the book: "Southern Inspiration", "American Originals", and "Pacific Rim Flavors". Each chapter focuses on that specific food foundation, unique with their own native spices and seasonings. The last chapter focuses on "Sandwiches, Wings, Li'l Bits, and Special Diets" including a gluten free fried chicken.

This book really does include every kind of fried chicken you could ever want: Hattie B's Hot Chicken, Buttermilk Fried Chicken, Coconut Fried Chicken, and General Tso's Chicken just to name a few. "Fried and True" also offers many side dish recipes that fried chicken lovers are sure to enjoy! Velvety Mashed Potatoes, Hash Brown Casserole, New Orleans-Style Vegetarian Red Beans and Rice, Tomato Pie, and Classic Buttermilk Biscuits! Doesn't that sound amazing? Maybe I just love a good southern dish!
