An order of all perfect eggs arrived, with perkier yolks and firmer whites than the recent Pete & Jerry’s still in the fridge.
We rather like these eggs, especially in the first couple orders end of 2017 and early 2018. They take a month but when one box arrives you order the next. Then there started being some rotten eggs (disturbingly liquid and brown insides), and they got smaller. I attributed this to maybe winter weather (less light, lower temps), maybe even some freezing weather? Then maybe summer heat? Maybe the operation is just so big now that it’s hard to make sure they find all the eggs in the pasture ASAP.
As spring and summer rolled along the overall quality of eggs continued to require caution when cooking. I float them in water and gently shake to get an idea. They should sink when good. I put the sinkers in the fridge to ensure longest life, try to use the rest quickly. I break all these eggs into a bowl before mixing/cooking to make sure they’re OK now after opening a few questionable eggs into a pan of otherwise good eggs.
For the price compared to pasture raised organic eggs available in stores, I am OK with the rate of bad eggs. However, it’s extra work to screen them out, and they’re smaller. But very tasty, and the shells are more firm than on the local pasture eggs. When I became pregnant I stopped buying them to save myself the hassle and any level of concern.
