160 Years of Quality Chocolate
In 1849, when Domingo Ghirardelli immigrated to the United States from his homeland of Italy, he had dreams of striking it rich in the California Gold Rush. He settled on opening a tent-store in Stockton, CA, selling various supplies and confections to fellow miners. With his new business proving successful, Domingo decided to open a store and hotel in San Francisco. After a major fire in 1851 destroyed his businesses, he began to rebuild. In 1852, he formed a new confectionery company that would soon become the Ghirardelli Chocolate Company.
The chocolate in these chips is delicious. The chips themselves are a great size, they're mini chips and they aren't too small or too big.
In my opinion, the toll house mini chips are too small. They fall too easily to the bottom of baked goods, individually they are too small to provide enough chocolate punch to suffice in one bite. These chips are ever so slightly larger and it makes a huge difference. These are my go-to chips for cookie baking. I bake a lot of cookies and whenever a cookie calls for chocolate chips, these are the chips I reach for. You can bake a small cookie (1-2T of dough) and still get good chocolate distribution with a chip this size.
