So much fun and color and options! This tea is like a canvas. This morning I made it for work and they need a little more flavor than the tea itself has. It’s a great mellow, natural flavor on it’s own if you like that. I added a lemon & ginger tea which flavored great and then to impress my coworkers added honey w/lemon juice to watch it turn colors. It was served hot and they are looking forward to more. When I came home I made another pot but didn’t add as many buds, the color was not nearly as the dark royal blue this morning but was still a beautiful sky blue as you see in the picks. The pics show the order that it changed as I added a few hibiscus and then poorer it over ice and then added honey and lemon and topped it off with a few garnishes (mint, rosemary & a nasturtium flower. I enjoy making everything an art and this tea just gave me a new canvas to play with. 😁

This works great as a natural food coloring. It's really blue. I made a strong tea out some of it, and added a little to white cake batter to make the blue layer of a rainbow cake, and also the violet layer by mixing it with some puréed beet. The strong blue tea has a not particularly pleasant dead leaves smell, but this isn't at all noticeable in the final product.
For the other colors in my rainbow cake, I used matcha green tea powder, yellow cake (made with egg yolks, fine yellow corn flour, and mango purée), yellow cake with beet purée for orange, and white cake with beet purée for red. I'll need to refine the recipe a bit, as some of the colors were more pastel, while others were very intense, so it didn't look like a properly balanced rainbow. The blue was definitely a beautiful sky blue though.
Edited to add: I just posted these pictures of a less ambitious 3-color cake. As you can see, the blue looks great, both in the cake and the frosting. I made a mistake by not adding enough lime juice to the beets this time, so the pink layer isn’t as bright as it should be.
For this cake, I used three tablespoons of dry flowers with about 1/4 cup of water for the three blue layers of the cake. I squeezed a few more drops out of the wet flowers to color the frosting. My newly 9-year-old decorated her cake herself.

The steeped flowers taste like peas from a vine but very mild and sweet!💙😍 the tea flavour is barely floral, which I love. It’s incredibly pleasant on all front and vercitile for so many recipes. I could easily turn this into a warm drink for a cold Canadian day or a magical cold summer tea.

CONCERN: 🤔
- said to be a family own business. There was a letter in the package stating that this is a father, mother, daughter team who pick the flowers and ship them. I happy to support this, but I am planning on contacting them about their methods of dehydration and the menthod of gathering the flowers. I would not want to support anything unethical.
- Is the family being well compensated for my dollar?
- the flowers arrive is a clear plastic bag, I wish there was a better way of preserving the flower. They were kind of crushed when they arrived. Either harder packaging or more (sustainable/green) padding.
