Review

Kohnke loves her cookie art and approaches it with humor and zest. This is a lovely addition to any library, whether gluten-free or not. --In Mama's Kitchen

Presenting 50 recipes, each with a full-page color photograph, along with a gluten-free primer that explains ingredients such as xanthan gum, and a selection of gluten-free products, Kohnke's first effort is a serious contender in the busy field of gluten-free baking books. Kohnke presents classic cookies (Shortbread Galettes; Chocolate Chip and Pecan), children's favorites (Sweet Cinnamon Snickerdoodles; Decorated Cookie Cutouts), fruit-based cookies (Lemon Drops; Frosted Pumpkin Currant Spice Cookies), bars (Double-Chocolate Brownies with Walnuts; Rocky Road S'Mores Bars), an entire chapter of creative flour-free meringues, and celebration-worthy confections like French Chocolate Macaroons and Pecan Wedding Cakes. The recipes use Kohnke's own gluten-free flour blend, which contains brown rice flour, potato starch, tapioca flour, and almond flour, chosen by her taste testers as the closest to wheat flour in taste and appearance. This blend can be mixed in advance, and she provides conversion information for readers wishing to modify wheat-based recipes. Many of the recipes use no flour at all, but this isn't a diet book: butter, eggs, and sugar appear in most recipes, and nutritional data is not included. With clear, concise instructions and beautiful photographs, Gluten-Free Cookies will appeal to novice and experienced bakers alike. --Publishers Weekly

Finally, recipes for the everyday favorites as well as some special treats that don't taste like rice flour. The cookies are light with a more "normal" flavor. The introductory section is very helpful for learning to bake the GF way. I use flour mix recipe for all of my baking, switching this for wheat flours in regular recipes. I highly recommend this book to all cookie lovers.

I've never written a review before but had to review this book because I saw there are only 3 reviews! This book is AMAZING! I've made 3 recipes so far but I am confident they are all incredible. Her gluten free flour mix is so good - my family really can't tell the difference between these cookies and non-gluten free. As a family with 3 newly diagnosed celiacs (ages 3.5, 2 and 39) we all appreciate the work Luane has done to create delicious gluten free recipes for us!!

Starting with the stellar brownies, I've been pleased with all the recipes in this book that I've tried. I especially like that they do not use a packaged gluten-free flour, since I don't like it. It's a lot of ingredients to buy to make your own, but totally worth it.

I have tried many gluten free recipes, and Luane's are by far the most consistently delicious! Every recipe I have tried thus far has surpassed my expectations. I modify all the recipes to be dairy free by substituting a combination of vegan margarine and coconut oil, and they hold up just fine. The Oatmeal almond cookies with dates are delicious, and freeze in logs very well. The Old fashioned sugar cookies are easy to modify with flavourings of your own - I added chopped candied ginger and chai tea to the recipe and they are crispy with a little bit of chewiness in the middle, and the Almond lemon biscotti turned out better than regular gluten-FULL versions I have tried. She includes kid-friendly (and bake-sale worthy) cookies and bars, as well as seriously healthy no-sugar, high-fruit cookies. Next year's cookie exchange will be a breeze! I can hardly wait to try more recipes. For a beginner baker, or a cookie-lover, this is a great collection to share.
