Well Received by my 300 person taste test...as was all the other root beer extracts I tested

I did a massive dry ice root beer taste test with some 300 people at a neighborhood party . The Gnome was well received, but NOT the favorite. The Gnome root beer seemed to have a more organic, if not harder/stronger flavor. Perhaps the least like a commercial sold brand name root beer of all the flavors I used...and the most expensive. Because of the distinct flavor, this may still become my go to flavor (see notes below), since my goal is to hit the homemade experience, rather than provide a sweet soda that we binge drink (as we do the commercial sodas.)

My recipe: Makes 4 gallons
4 gallons slightly chilled water (too cold may not dissolve all the sugar)
2 cups white & 2 cups brown sugars. Mix with drill & paint stir tool
4 ounce Gnome extract (FYI-most extracts are 1 oz per gallon)
4-5 lbs of dry ice partially broken up (add slowly and as needed to keep the mix from "boiling over")
I have several tricks (like the paint stir tool) that you will have to figure out on your own to serve the root beer to 300 people in a short period of time...)

You ask? "What was the best received flavor from my taste test? Honestly, the brand did not matter. The extracts all have distinct flavors (okay, I tried, in NO specific order: Hires, Zatarains, Cook, Gnome, Rochester (hard to find), Watkins & McCormick.) Some flavors are "drier" (more flavor/less sweet) while others are sweeter. People just wanted cold, fizzy, and sweet with a taste different from commercial bottled root beer (they want a "homemade" flavor and experience...with the mists coming out of the serving containers!) Yes, I have my favorite and I could tell the differences, but honestly, the less expensive $1/oz was as well received/enjoyed as the $4/oz extracts. No one turned down any of the flavors.

This is the best root beer extract on the market in my opinion, and worth the price. I have homemade root beer on tap at all times (served out of a 5-gallon Cornelius keg alongside my homebrewed beers) and visiting children, non-drinking guests, and my family members absolutely love it. It's a special treat for my two young sons and occasionally even for myself.

I have experimented with different combinations of white sugar, Turbinado (raw) sugar, and honey with this extract but I have found that everyone likes it best if I just mix it with four pounds of regular old white sugar and five gallons of bottled drinking water. I cook the sugar with some water, maybe a half gallon, on the stove to produce a heavy syrup. This ensures that it is both thoroughly dissolved and sanitized. Then I pour that in the keg, add some water to cool it down, add the extract, and then the rest of the water and mix. Then I hook up the gas and wait a week or two for it to carbonate, then enjoy.

The traditional way is to mix it up in a big bucket with a pinch of yeast and siphon into individual bottles, which works great too, but make sure you use the plastic kind with screw-on caps due to the risk of bottle bombs. The high sugar content means that the yeast will never go completely dormant, which on the positive side means your drink is self-carbonating all the time (even when the bottle is only partly full) but the downside is that you have to watch the pressure.

I'm probably not using this like it was intended, I'm using canned seltzer and making it as a single serving at a time mixed with stevia and it is delicious. Love that I can have soda without all the bad stuff.

Not super happy with the big price jump recently though (50% increase). Hey, Gnome, can you lower the price back to where it was?

I used this extract for my first attempt at Root Beer. I am a experienced beer brewer so I had all the bottling equipment already, minus the plastic bottles. I did decide to dedicate a bottling bucket to root beer to prevent cross contamination.

I made a three gallon batch with 1/2 brown sugar and 1/2 white sugar (6 total cups, two per gallon). I fortunately tasted before bottling and found the flavor too weak (I followed suggested quantity of extract on the back) and added the rest of the packet (i.e. all 4oz). Flavor was much better with all the extract, I bottled with Red Star champagne yeast in Cooper 740ml bottles. Two days later I had very drinkable root beer, sweetness is on the light side (which I like). Going to let them sit for a few weeks and see what happens. I doubt this batch will outlive January 2016.

Overall, a very simple and rewarding process. If you can make mac-n-cheese you can make this root beer!

One of the best root-beer extracts I've tried. Follow the recipe and you'll have some good tasting root beer. I tried it by mixing different types of sugar and yeast.. etc.. and found the regular recipe works best.

I also purchased a carbonation kit (instead of using yeast). Which helps when doing 2 liter bottles.

If you're doing yeast... be careful... don't use cheap glass bottles or you may be in for a world of hurt. (exploding bottles)
If you're capping bottles yourself (re-using old beer bottles etc...) they typically take 2x longer than EZ cap type bottles (depending on the type of caps you use... such as oxygen absorbing).

Also... if you use yeast... the flavor will vary... since yeast will eat your sugar... making the drink less sweet and a tiny bit more bitter.

Everyone loves it, especially the non-beer drinkers. After treating this like regular beer and trying to force carb it at 12 psi for 2 weeks in a keg, I found online that it really needs 40-45 psi due to the amount of sugar. For my next batch I'll try to pre-carbonate 4 gallons of water and I'll use less sugar. 5 pounds of sugar in 5 gallons of soda is a lot.

I made a 5 gallon batch and carbonated it in a keg. I used 1 lb of brown sugar with 4 lb regular sugar, 2 T of Madagascar vanilla extract and 1 T of Maple extract. Turned out great. I will definitely buy this again.
