Stop complaining about the crunchy aspect, stop down-voting the product, simply because you don't know how to prep these fabulous noodles!
Fill a bowl with warm (not hot) water deep enough to add the noodles and have them be covered. You can do this in a cookpot as well if you are making a lot of noodles..
Add the noodles
Add about 2-3 TEASPOONS (not tablespoons, not soup spoons, not cereal spoons..) of baking soda.
Gently stir and wait about 4-6 minutes. Don't add extra baking soda and don't wait more than 8'ish minutes. Rinse well in a strainer under running water. Pat dry with paper toweling.
NOW your dang noodles are soft and pliable the way you hoped they'd be!
Rocket science? NO..
Now..all you bitter naysayers, give it a try. The crunch is minimized. The noodles are wobbly. Go enjoy!

Now in order to get them to be soft as regular pasta noodles after long experimentation I found the following technique to work;
# 1 RULE: NEVER BOIL THE KELP NOODLES
1) Prepare your favorite sauce and heated to until it boils
2) Rinse the kelp noodles with hot water and live them inside until the sauce boils.
3) Turn off the heat of the sauce and immediately strain all the water off the noodles and immerse them in the sauce.
4) Leaven there for around five minutes and they will be as soft as regular Angel Hair Pasta.
It is a biochemical reaction to sauces I really don't know the exact specifics of it but I know it works.
I am going to try these noodles with chicken tikka masala this week. I am sure it will be great!
