My first effort was with Krusteaze mix. Worked fine, but the finished loaf was a blob about eight inches across and two high-not really sandwich making material.
So I bought this loaf pan because it was cheap. For five bucks I didn't expect much more than a disposable pan.
Imagine my surprise when it turned out to be well-formed and sturdy. It came with care instructions on a label stuck to the bottom with some kind of flexible sticky stuff. They were printed in darn near the smallest font I have ever seen. Gotta be 1point or maybe less. No way my 67 year old eyes are reading that.
So I washed it by hand. Made up another batch of dough, this time with the two hour rise instructions, dumped it in the loaf pan and 24 minutes later had a nice looking loaf of bread. Took it out of the oven, turned the pan upside down and the bread fell out. No sticking at all and inside the pan looked almost as clean as if it hadn't been used.
So' I bought the cheapest metal pan I could find. It's well made and worked perfectly.
Worth five stars.
Update: I've now made seven loaves of bread in this pan. It's still in perfect condition. No rust or corrosion, and the non-stick coating shows no sign of thinning or flaking off. You can't beat that.
I would love to find pans that are halfway between the medium and mini loaf pan sizes. The minis are too tiny for gifts, but the mediums (like this one) are too large.
It's a good quality pan too. Love it!
Things I do differently: Although the label doesn't say to do this, I reduce the oven heat by 25 degrees because of the dark, non-stick coating and the bread reaches the recommended intenal temperature, (approx. 190 degrees), within the time stated in the recipe. I also, from force of habit, wash all my darker pans or those with non-stick coatings by hand, and haven't had these pans for very long, so I can't speak to the durability of the coating but so far, I've experienced no problems with it.
