All.are.delicious. And quick, AND easy. Even if you're a cooking pro, these recipes shake it up a bit so weeknight dinners are a little more interesting. I have never made this many recipes from one cookbook before, and I cook a lot. Now I don't know what I'd do without this gem! Get this book already and thank me later.
This cookbook is the perfect go-to for quick easy satisfying meals to make during the week. It's a constant struggle trying to make and eat something good without spending hours in the kitchen. We got other things we gotta do, right? I'm going to get a copy for my Mom as well because she wanted my copy! :) No fuss, no pain in the ass techniques, just delicious fresh meals that everyone will love!!
On the food side, Amy has made many dishes that I didn't think I'd like (every dish should have chocolate in the name whether it's in the recipe or not), but I scarf them down. It seems that there's a rule: no dessert until you finish your dinner. This seems terribly unfair. But if Amy will make anything that I can spell or pronounce, then the quandary is slowing down and enjoying ALL that she's prepared. Love her "Easy Ground Beef Stroganoff"
I prefer things that aren't green. I won't touch guacamole no matter how well presented in her photos. And I see no earthly reason for parsley. but she's a food and photo magician. You can always tell which plate was mine. Hey, what I do love costs $60 a pound (all bottom feeders, you know, like lobster, clams, calamari (close enough), but one look at the stroganoff dish and I'd be happy with that for my birthday dinner. (You paying attention?)
I started by saying that Amy is a fantastic photographer. She really is. She has the patience of Ansel Adams without the interns, and can make almost everything look mouth watering. I have been taking pictures for over 60 years, and I repeat myself. This book is a double treat: food and professional pix. It's like National Geographic came out with a cookbook. Amy should get a Nobel Prize. Well, hell if Bob Dylan can get one with marbles in his mouth...

Every single one of these has been easy, fast, and DELICIOUS. The last two in particular really knocked our socks off. And I already have the Shrimp Quesadillas, Honey-Sesame Chicken Salad Wraps, and Easy Ground Beef Stroganoff on the agenda for next week's menu. After that, I need to make the Grilled Fish Tacos, Italian Meatball Skillet, Sweet and Sour Noodle Bowl, Kitchen Sink Italian Soup, Unstuffed Cabbage Roll Skillet... and well, pretty much the entire rest of the book. Seriously.
Buy this one. You won't regret it.
P.S. Don't skip the front few pages - it has plenty of awesome tips about menu planning and how to keep a well-stocked kitchen!
The recipes are really easy to follow!!! Just as the title of the book says, "Good FAST Eats". For me the key was FAST!! My husband LOVES the Honey-Sesame Chicken Salad Wraps. He's a very PICKY eater!! My favorite recipe is Easy Creamy Coconut Pie!! (I just love anything coconut!) The pie did NOT disappoint!! I've made it several times since I got my book in the mail. I can't say how my daughter & daughter in law likes theirs, because it's part of their Christmas gifts.
Did I mention the photography?? I'm more sure the droll marks will wipe off!! You can practically smell the food in the pictures !!
If your looking for a new cookbook for yourself or a Christmas gift, I would HIGHLY recommend: Good Fast Eats to add to your collection or to begin one!!
All recipes use ingredients readily available, and do not require any special techniques or special equipment and there is a comfort in knowing that when I make one of these recipes it will turn out well, and a recipe I can make for guests.
