I eat a Whole Food Plant Based Diet (WFPB) and am a heavy daily user of my InstantPot (IP), but I use it to cook whole foods i.e. beans, lentils, grains, potatoes, vegetables etc. The IP really excels at cooking whole foods. It is unfortunate that Jill, with her captivating personality and youtube audience and blog, does not demonstrate this IP capability but instead relies on canned beans and mock meat as the centerpiece of her recipes.
With regret, I am returning this cookbook as I just will never use it and feel slightly deceived. If you are looking for healthier recipes for your InstantPot, Jill Nussinow's "The New Fast Food (The Veggie Queen Pressure Cooks Whole Food Meals)" and Lorna Sass "Great Vegetarian Cooking Under Pressure". I have both of these cookbook and use them daily.
So the next thing to do is find the tools to make food easy as heating up processed foods. The Instant Pot is it. We own the mini for traveling (3 quart), the 6 quart is our main appliance and for soups, and we eat a lot of bean soups, you NEED the 8 Quart Instant Pot or you will get boil over issues.
Next is to find a cook who follows Dr. John McDougall, Dr. Michael Klaper, Dr. Furhman, Dr. Caldwell Esselstyn, Dr. Dean Ornish, Dr. Collin Campbell and Dr. Michael Greggor's diets. Hence, that leads us to over 100 Vegan Instant Pot cookbook authors. Chef AJ, Jill McKeever Jill Nussinow (highly recommend) and Cathy Hestor are the books that make it easy, enhance the flavors, and adhere to the above mentioned MDs dietary guidelines to reverse dietary illnesses and maintain optimal health.
The focus is on making ingredients into to meals as easy as microwave crap.
I especially like this book because of the flavors. And don't forget to subscribe to her youtube channel.... I wonder if Jill needs to put a hair net on those ears???? Hummm....
The pictures are the worst I have ever seen in a cookbook...this is obviously one someone put together on their own. I'm not so picky about photos but for the love of God, they make you not want to cook the recipe, they look like bad iphone pictures in home lighting where all the food is literally grey.
There are so few recipes in here that it would be better and faster to just google Vegan Instant Pot recipes. And pictures of her family in bunny ears taking up pages that could be used for recipes when there are so few recipes seems really a shame.
I honestly didn't need a cookbook for throwing beans in my pressure cooker...
