Originally founded in 1871, Columbian Home Products is the oldest cookware manufacturer in the U.S., famous for producing Porcelain on Steel cookware. Granite Ware has a carbon steel core for strength, conductivity and superior heat distribution. Porcelain is fused to the steel at 2,000 degrees Fahrenheit producing a non-porous, inert glass surface that is naturally non-stick. Porcelain can chip if dropped, however this does not reduce the effectiveness of the cookware. There are no PTFE’s, PFOA’s or any other chemicals to change the taste, color or nutritional value of the food. No worry about using acidic foods in this pan!
I am planning on cooking a small roast, in this pan, next. I would consider this pan as a small dutch oven.
All graniteware are delicate. You can't bang them around, or they will chip. But they are very easy to clean. After baking the wings, i just put dish liquid and hot water in it to soak, for about 30 minutes. It cleaned up easily! I would recommend using a plastic scrubber, only, since this is enamel. But i have not needed to use any scrubber! Just soak, and everything cleans off easily!
I love this pan!!! If i take care of it, it should last a long time.
I think i will also try making smothered pork chops, with mushroom gravy soon. Will be back with updates.
The only reason i gave 4 stars, instead of 5, is that the pan does have a sharp edge around the lid. Other than that, i really love it. The lid fits well. You could make a good size casserole in this pan too!

Other reviewers have noted sharp edges and light weight as deterrents to earning 5 star ratings. While I agree about these shortcomings, they are minor in my view (arguable, of course), when placed in the context of their versatility and efficiency.
Bottom line - I save on sauce needed to cover meat and can use it just like my old roaster. "Meets" my needs.
