Ghee is prepared by melting and simmering butter until all the water evaporates and the milk solids settle at the bottom. The remaining butter oil is very stable, giving it a high smoke point which makes it an excellent choice to use for frying and sautéing and it can be stored without refrigeration for up to a year. Organic Ghee is rich in nutrients, including healthy fat soluble vitamins which aid in the absorption of nutrients in the foods. Ghee contains naturally occurring CLA, Vitamins A, D & K. Per Ayurveda, cow ghee is one of the most sacred foods. During the clarification process, milk solids are removed, leaving the healthy butter fats behind. Small, trace amounts of casein and lactose can possibly remain in the ghee, but unless a person is extremely sensitive, consuming ghee will be fine, even if dairy is not. Ghee does not contain milk solids, which gives it a very high smoke point (~485 °F). Because it is very stable at high heat, it is considered one of the best oils for baking, sautéing and deep fat frying. When you sauté or fry with butter, milk solids can burn causing an unpleasant odor, appearance and taste. Also, there is no hissing, popping or splattering when you use ghee. It also has a sweet aroma and actually becomes richer in flavor as well. Ghee does not contain harmful trans-fats which can cause heart disease and many other serious health problems. Well-prepared ghee is very shelf-stable because it has low moisture content. Keep in an airtight container at room temperature for 2-3 months. In the refrigerator, it can last up to a year.

Because Ghee has a higher flash point than butter, it doesn't break down at all during cooking. You know what I'm talking about. You use butter to sauté but find that you have to keep adding more and more as you go because it mysteriously disappears or browns onto the pan. That doesn't happen with Ghee.
I'm not one to participate in the many common dietary trends. As someone with a bit of formal training on both nutrition and the workings of the human body, I believe that balance and moderation are the keys to excellent nutrition. My mantra is: everything in moderation. We do need some cholesterol in our diets, just not as much as we'd like. We also need carbohydrates. The great majority of us, who aren't sensitive to lactose or glutens actually should be eating these things.
That said, I am not a fan of GMOs these days. My viewpoint is not dietary in nature. I certainly don't want to get into my environmental concerns or discuss the virtues of anti-trust regulations. This is not how a customer review system should work. It discredits the ratings and reviews already posted for this company. Since I chose this product in part because of the positive reviews, I feel cheated and docked a star from my review.
The ghee does taste good and works fine as a substitute for butter. I am also happy to support organic products, but not corrupt product reviews.
I began using this ghee as a part of a transition to eating more healthy, home-cooked foods. More recently, I participated in an Ayurvedic cleanse that required that I take 1/4 cup of plain, warm ghee for several mornings straight! Though this can be an unpleasant experience with ghee of lower quality, the Pure Indian Foods ghee was truly delicious. The flavor is clean and sweet, without any of the harshness or overbearing unctuousness of other ghees (even those labelled as organic). And not a hint of rancidity, to which I'm very sensitive.
Only unhomogenized milk is used for this ghee, which is unusual and extremely beneficial. Homogenization alters the structure of milkfats and adversely impacts their bioavailability and handling in the blood. This attention to the quality of raw materials is just one example of this company's dedication to their customers' health.
I'll say that this one takes the slight edge in the taste and aroma department. It has a rich buttery smell, and it seems like they clarify it a little less because it's slightly grainy when you taste it at room temperature.
That said, I find myself buying the Purity Farm ghee because this brand is almost twice as expensive and while it has the edge in taste, it is very very slight and not worth the big premium to me. It might be worth it if I was primarily using this at room temperature like on bread, but I usually use regular butter for that, and for cooking you really cannot tell any difference in flavor. There is also a chance I am getting ghee from different times of the year for each brand which does affect the flavor.
So in short, amazing high quality ghee, but a bit overshadowed by the much cheaper and also amazing high quality Purity Farm Organic Ghee, Clarified Butter, 13-Ounce brand ghee.
