This flour reminded me of using a rice flour, it doesn't need as much water (I live in FL) with my dough. I cut it down, but will cut it down more. The crust was flakier and crisper...all in all it was DELICIOUS! I wanted to try this because of the reviews and I am glad I did. You now have a LT customer!

    I used to buy this product from Costco, but I never knew how precious it was! Then, Costco discontinued it. I had to buy a similar product of Costco's own brand. Since then, my wife complained a lot of time that Chinese buns cannot rise... Recently, I took my wife complaints seriously and tried to find out the causes... I did a lot of searches to see if other people have similar issue. Luckily, one youtuber shows some flours may cause that Chinese buns cannot rise. Then, I realized we had very good results when we used Great River all-purpose flour.

    I immediately bought Great River all-purpose flour from Amazon... Miracles happen! Chinese buns rise very high! Today, we made noodles using this product, my 6-year-old son said that he remembered this flavor, and he ate a lot!

    As Thanksgiving is approaching, I am very gratitude of this product. Hence, I write this review.
