I'm not a good cook, but almost 30 years ago I loved making individual customized omelettes at the UC Santa Cruz Crown-Merrill dining hall.
A few weeks ago I ordered this pan, and over the last two weekends I made myself two great omelettes.
The ceramic surface is great for sautéing veggies, add in your whisked eggs, nudge and nurture your omelette, until you are ready to flip. The ceramic makes for even cooking.
Add some cheese, cover with a pot top for better melting- tadah- you made a wonderful omelette.
