We have slowly begun replacing our nonstick calphalon pans with ceramic pans. Not only are they significantly cheaper than calphalon, they're so much safer. I was concerned about a learning curve or possible issues with switching to ceramic, but we've had no problems. The first ceramic pan we got was a greenpan skillet, and we had that for a month or so before our old griddle finally started flaking too much to use anymore - so we bought this. We've been very happy with both the skillet and the griddle, and haven't had any real issues with the switch. It's best to rinse them right after you're done using them, to help make cleaning easier, but otherwise there have been no problems with keeping them clean. They tend to transmit heat a bit differently than the calphalon pans, so we keep a closer eye on things and adjust the heat accordingly. Overall, we're very happy with them and will continue to replace the old stuff with ceramic pans as needed.

Unlike other reviews, the pan I received 1.25 years ago is almost perfectly flat. I have had no problems with heat distribution, at least on my electric glass stove top. Cleaning is a breeze, except like all other 10" griddles is awkward due to its size. This pan still cooks and cleans like it is brand new. I highly recommend this pan.

I don't understand the negative reviews unless Greenpan has a quality assurance problem and I just got lucky. That's not my experience given I own several of their pans and am thrilled with all of them. Maybe people are in a hurry and subject the pan to rapid heating or cooling. There isn't a non-stick pan made that will tolerate very high heat.

I have used it for tortillas, quesadillas, pancakes and grilled cheese sandwiches. It is great easy to clean. From my experience, you only need low heat compared to traditional pans. I never cook more than 1/3rd heat and it cooks great. You don't need to turn it any higher the results are perfect on low heat.

Not nonstick/hard to clean stains

I’m disappointed in this pan. I was very excited about buying it, but it hasn’t come close to my expectations. As recommended, I have not used any non stick spray on this pan yet it still has become stained. I had to scrub with 3 different cleaners to get a black stain off that was just from a tortilla. I make tortillas all the time and they don’t stick to the pan. Until I used this one. They stick and what’s left on the pan adheres to it and is nearly impossible to get off. Even when I use butter or oil, things stick and glue themselves to it while cooking. My cheaper pans are better.
