There is, however, a definite problem with the glue used to adhere the label to the pan. I had to basically bake mine and take a straight razor to it after a full soak, so it wasn't a simple fix. Even after the effort, the pans show traces of residue. The only reason I'm not fully bothered is because I'll be using silicone mats or parchment paper while cooking on these.
I was really excited to try this bad boy out the other day for a high-temperature dish. After only ten minutes at 450F, I found the pan warped in a mild upward bend. However, when brought back to room temperature, the pans quickly resumed their original shape. Even so, it's frustrating to know that they don't do entirely what they promised to do after their first real run. Still, this is better than the last pan I had. I'll keep using it until I find an adequate replacement.
While this doesn't stop me from using it I'm also shocked at how it can be considered "commercial grade". I have used smaller, normal sized trays bought at the supermarket that don't warp at all and certainly not like this one does. But like I said, it is sturdy (despite the warping) and it is hard to find a tray this big. So it is recommended for those reasons.
