I am not a professional chef, but this is the 3rd knife I was excited. The first one is Natural Basic. And the second is Shun Premier Chef's Knife, 8-Inch, and here is the 3rd one, J.A. HENCKELS INTERNATIONAL.
Over the last two days, I've used this knife to trim and cube chuck steak and Boston butt, chop kale, slice chorizo, and dice roasted red peppers. I used it to carve our turkey at Thanksgiving, and it's equally at home doing a chiffonade of basil or dicing carrots. At this price, I'm likely to buy duplicates to keep both at my parent's and in-law's houses for when I cook there, because it's rapidly becoming the knife I can't work without in the kitchen.
The only thing that keeps it from being 5 stars for me is that the handle could be a little more comfortable. They have put a slight edge on the grip and I'm aware of it rubbing on my palm while using. The blade is really handling the big chores very well.

Great knives for the price of popular Henckels brand. Made with German steel and fabricated in China. I was surprised for the low price for this pair until I received them which is thinner than what I expected. I love this design where the blades have hollow spots which create air gaps, this make it easier to slice solid foods like cheese and hams. They do not stick as much as straight smooth steel blades. The 3-rivet hilt feels solid, smooth, and nicely detailed. Sharp.

(The word Santoku refers to a general-purpose knife that originated from Japan. It is a chef knife primarily used for dicing, slicing, and mincing; designed with the weights of the blade and the handle to be equally balanced.)

I bought these at Target (for a few dollars more) just to see what they were like. I didn't expect much from knives that cost about $11 each. I was very happy with the result as the knives are well constructed, reasonably well balanced and cut well. These are stamped knives (not forged) and are thinner because of it, but they are not flimsy. The larger of the two was not as razor sharp as I would have liked but that was corrected by a couple of passes with a hand-held pull through sharpener (These typically sell for for about $10 and I would suggest you get one). Honestly, I think these knives are fine for "the rest of us." Will they last 50 years?? Probably not. Will they last many, many years...probably yes. With that said, do take proper care of them. I like to HAND wash my prep knives after I use them. I try to not let food dry on them and I never soak them overnight. Lastly, I never put any knife (with the exception of tableware) in the dishwasher. I know people do, but dishwashers seem to ruin my knives.

I have friends who have showplace kitchens with commercial ranges and top flight gadgets. Typically they use their kitchens to reheat Chinese carryout as they are working so many hours. My mother had some mismatched (and beat up) pots and pans, 2 ancient knives of dubious quality and an old Sunbeam mixer and she was a renown cook among family, friends and neighbors. Her secret was not in the equipment, it was in the effort, practice and skill. A $100 knife will certainly outshine these but they are vastly better than what my mom used. I think she would have been thrilled to have such a luxurious set!

The singular advantage of a traditional santoku knife is in the way it is sharpened. It should have a chisel edge (flat on one side and beveled on the other, rather than an equal bevel on both sides.) A typical chefs knife is beveled on both sides. Food does not stick to the beveled side of a traditional santoku knife. If you are right handed you want the beveled side of the santoku to be on the right. Accordingly, when I received these knives, I reground the edge on the larger knife to give a right hand bevel. It works very nicely in the manner the Japanese designed it with a sticky food (chopped garlic) sticking to the flat side only. The Granton edge grooves are a nice idea and most other chopped foods such as carrots and onion do not stick to either side.

I've only used it for about an hour, but at this point in time, find that this knife holds an edge well against vegetables on a plastic cutting board.

To call me an amateur chef would be an insult to amateurs, so I didn't want to spend a lot on knives. Getting two Santoku knives for $20 seemed like a great deal for Henckels (even the ones made in China), so I bought them. I use the 5" knife pretty much everyday and I do not have a single bad thing to say about its performance. It slices through everything from meat to bread to veggies with ease. The only negative I have had with these knives is the blade was a little off center when they arrived, but a couple quick passes with the sharpener and that was remedied.

Great day-to-day kitchen knives. I sometimes purchase expensive knives and they are worth it, especially JA Hanckels knives. These knives are far less expensive, but have become my go-to knives for most use. I just purchased a second set for a home we use occasionally. They have kept their edge for more than 2 years, the original set has, and have replaced my small chef's knives for most use. Even good for hard cheeses, which a chef's knife is not!

They are balanced well and are comfortable to use. Handles are easy to grip even when wet. They might be dishwasher safe, but I don't advise dishwashers for any good knife. These knives are a snap to clean, with no little crevices, etc.
