Hershey’s Ultimate Chocolate Brownie Recipe
Instructions
1. Heat oven to 350°F. Grease 13x9x2-inch baking pan or two 8-inch square baking pans.
2. Stir together cocoa and baking soda in large bowl; stir in 1/3 cup butter. Add boiling water; stir until mixture thickens. Stir in sugar, eggs and remaining 1/3 cup butter; stir until smooth. Add flour, vanilla, and salt; blend completely. Stir in chocolate chips. Pour into prepared pan.
3. Bake 35 to 40 minutes for rectangular pan, 30 to 35 minutes for square pans or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
4. Frost with buttercream frosting. Garnish with chocolate chips, if desired. Cut into squares. Makes about 24 brownies.

In Montezuma's days, the cacao bean, which is really a seed and not a legume, grew only in Latin America. Today, more than 70% of the world's cacao beans are grown in western Africa.
In Montezuma's days, the cacao bean was separated into cocoa powder, which was very highly prized, and cocoa butter, which was the waste product. Today, cocoa butter is very highly prized and in short supply because it is needed by the chocolate industry to feed the world's addiction to chocolate. Today, cocoa powder is in oversupply and in need of more buyers.
Even before Montezuma's days, the Incas in Peru considered cocoa to be "the drink of the Gods," which explains why "Theobroma cacao," the modern scientific name for this plant, means "God" "drink" "cacao" in the Greek language. However, radiocarbon dating indicates that the Aztecs drank liquid unsweetened cocoa before the Incas. In Honduras, archaeologists uncovered elaborately designed bowls used by the Aztecs around 1600 BC to drink liquid unsweetened cocoa.
Disadvantages of cocoa powder: Cancer-causing mycotoxins, inflammation-causing bacterial endotoxins, the toxic heavy metal, cadmium, and acrylamide, which is the slightly cancer-causing chemical produced when starch is baked or fried (but not produced when starch is boiled or steamed).
Advantages of cocoa powder: Cocoa powder, even when unsweetened, tastes much better than all other health-promoting powders, including turmeric powder, olive leaf powder, matcha green tea powder, ginger powder, garlic powder, Korean red ginseng powder, astragalus powder, amalaki powder, globe artichoke powder, milk thistle seed powder, reishi mushroom powder, Agaricus blazei powder, fenugreek seed powder, etc.
But this review is about the 23-ounce boxes as well as the cocoa inside them. For the package, TWO stars.
Two and five does not average to four, but I didn't want it to look like I was rating the cocoa at three. Not enough dimensions in the Amazon ratings.
The packaging leaves a lot to be desired. I'd prefer to leave it in the plastic container it comes in, but due to the glued-on paper seal, the glue of which does NOT come off even after repeated washings and scrubbing with Goo Gone and a kitchen scrubber, and the looseness of the top, this isn't feasible. The product is fully open to the air all around the fuzzy paper-coated rim, and the air here is coastal and very humid. I knew that the small boxes of cocoa were like this, but I felt sure that the bigger boxes, which the consumer might keep for a much longer period, would be more air-tight. And because this particular box is so large, it makes it easy to deform the plastic just by picking it up. This makes it very easy to have a terrible accident in which the box slips out of the hand, opens the lid on the way down, and explodes cocoa all over the floor. I would not buy these large boxes unless you are prepared to immediately move the product to smaller, more air-tight containers. Otherwise, highly recommend the cocoa. :)
