3 level tablespoons of cocoa + 1 tablespoon shortening or oil = 1 ounce unsweetened baking chocolate.
1 level tablespoon of cocoa + 2 teaspoons shortening + 3 1/2 teaspoons sugar = 1 ounce semi-sweet baking chocolate.

Truffle Dessert Brownie Recipe

Instructions

1. Heat oven to 425°F. Grease bottom of 9-inch square baking pan.

2. Melt butter over low heat. Add cocoa and 1 cup sugar; stir well. Remove from heat; cool about 5 minutes. Stir in flour and vanilla. Add egg yolks, one at a time, beating well after each addition.

3. Beat egg whites with 1 tablespoon sugar until soft peaks form; gradually fold into chocolate mixture. Spoon batter into prepared pan.

4. Bake 18 to 20 minutes or until edges are firm (center will be slightly soft). Cool completely.

5. Refrigerate about 4 hours. Let stand at room temperature about 15 minutes before serving. Garnish with powdered sugar. Makes 16 servings.

Hershey's Special Dark Cocoa 8 Ounce Can

This unsweetened Special Dark cocoa is much darker and richer than the same brand’s regular variety. The difference is obvious both visually and in the flavor. Comparing the nutritional breakdown the two varieties are virtually identical with the only difference being the regular cocoa has no sodium while the special dark has 65mg. Fat grams, calories, fiber, protein, etc. are all a match.

To test the taste I made two batches of my favorite brownies using both types of Hershey’s cocoa. The Special Dark brownies are so dark they are almost black. And flavor-wise, they definitely have a more pronounced chocolate taste. While delicious, the brownies made with regular cocoa are definitely less intense. After baking the texture of the two batches was identical – moist and fudgy.

The other adult preferred the Special Dark version to the ones I normally bake with the regular cocoa, and I agree. But, if more of a milk chocolate rather than dark chocolate fan, stick to the original because the dark cocoa packs quite a serious chocolate punch whether used in smoothies, sauces, hot cocoa or baking.

I add this to my shakes, use it to make hot cocoa mix, and sprinkle on things as a garnish. Better yet next time you do a dry rub on the sweeter side, thrown in some of this and you get a savory richness. I have been using it for years and it's fantastic. The only problem that knocks it down a star, is the sourcing of the cocoa is unknown. It would be nice to know if it follows fair trade practices.

We like to make as many things from scratch as possible...which includes pies, ice cream, brownies, syrups, etc. This Hershey's Special Dark Chocolate has really taken our homemade treats to another level. What works best for us is to purchase both the Special Dark container and the Regular Cocoa...and I mix the two. It seems to be the perfect balance...at least for our family.

This cocoa is the BEST. It has such a rich flavor. I use it all the time. The label says that it doesn't have the same amount of anti-oxidants as regular cocoa -- oh well. It tastes so much better!

I have tried other dutch processed cocoa, but nothing like this. So delicious.

I prefer the dark cocoa over the lighter; I use it sometimes to make fridge cookies and I'm pleased with the rich taste. I won't go back to the normal cocoa. I honestly don't know what else to say about it that would be of help..... Hmmmm.... The texture is a fine powder just like the lighter version. The taste is full-bodied.

I was originally trying to order black cocoa but couldn't find it so I thought this would be a good substitute. It is OK and probably worth doing it again.I thought I was ordering something unique but did notice they sold this in our local grocery store. Thank God for Amazon Prime. The only negative was that there was a slight hole in the seal of the cocoa and it got cocoa powder all over the box. . . and the other item along with it.

I absolutely love this! It has so much more flavor than the regular cocoa powder. It is rich and deep tasting. I use cocoa powder in my morning smoothies for the chocolate taste, low carb and calories as compared to actual chocolate, and the health benefits if they really do exist.

Amazon Prime Pantry has the lowest price that I’ve found but they have changed the ordering process with Prime Pantry with a new higher price or extra subscription and minimum order required.
