It requires water at a precise temperature, fresh, high-quality beans at the right grind, slow and even water flow, and patience during the brew time. HIC’s Coffee Filter Cone is how to make good coffee the pour over coffee way. For a perfect brew, place the Coffee Filter Cone over a mug or carafe. Insert a paper or reusable coffee filter and measure in medium-grind coffee, or grind whole beans fresh (approximately 2 rounded tablespoons of ground coffee per 8-ounces of water, or to desired taste). Using just-boiled water, wet all of the grounds slightly and let wet grounds stand to bloom coffee for 15 to 30 seconds. When grounds mix with water, they expand slightly and release more flavor. Slow and precise water flow is critical to extracting the most flavor with this pour over coffee maker. Pour the remaining hot water, slowly and evenly, from the center of the grounds outward, in a circular motion. Allow the coffee dripper to finish dripping. After reading the reviews on this HIC Porcelain Coffee Filter Cone I decided to go with the #4 vice the #2 size as I wanted it to fit on top of my coffee mug. The #4 fits just right as it has a nice wide sturdy base. I don't use a pouring stand, but who knows maybe in the future I just may splurge and get one. The easies way for me to do coffee with this is to put my cold water in my mug, then from the mug to my wok to heat the water. While the water is heating I grind the coffee fine and put it into a filter which is already in my HIC Porcelain Coffee Filter Cone. Then all on top of my mug. Pour hot water into the HIC Porcelain Coffee Filter Cone and it takes about 1.5mins to drain into my cup for coffee... YUM
When I bought this HIC Porcelain Coffee Filter Cone I was worried that my coffee would just run through the filter and get a watery blend like many people have mentioned. This may have happened if I used regular grind, but as I use fine grind I have really seen no appreciable difference between the flow rate of this and my old plastic dripper. By the way my plastic coffee filter cone had four holes, but they were smaller in diameter than this one. Oh by the way I wasn't kidding about tasting different, the coffee for some reason taste cleaner out of this dripper. Hard to explain, but you will see what I am talking about.
Like I said my only concern is LEAD. I remember hearing about lead issues in porcelain coming from China before, but figure they should have it fixed by now. Maybe the vendor will test for lead and get back to us on this HIC Porcelain Coffee Filter Cone.
The closest I'd have to a complaint is no fault of anyone, just part of the way this works. I pour in my hot water and no matter how slowly I do it most of the coffee moves to the sides of the cone. This is only a problem in theory, as the coffee still tastes fine. The real complaint is how afterwards this thing is a drippy mess, and coffee can stain some countertops. If you carry it over to the trash you need something in your other hand to catch the drips (the cup?) and a third hand to actually empty the cone (a simple dump won't do the job, the filter sticks to the sides). So you need something waterproof to set it in until you're finished drinking your coffee and have both hands free. Oh yes, the filter is also very hot right after brewing (duh!) so that's another reason to wait.
I'm going to make a few more cups to see if this is really the way for me, and if so I'll upgrade to the cone with a stopper that also lets you steep your coffee a bit.
This has done the trick - it's solid, has a wide base, is easy to use, clean and store. On the downside, the wide, three-holed base needs a carafe or pot that it will rest on firmly. Not as simple as just plumping the thing down on any handy vessel. I found out by accident that it fits snugly over my fav big mug, so I can use this to make a single hearty cup as well.
Making coffee with a pour-over cone takes some getting used to. It isn't as simple as boil water and pour! Do some research if this is your first time, be prepared to experiment with grinds and technique, but you will get a good cup of coffee with this cone.
Update: OK, it's been several months, and we still really enjoy this little gem. It's easy, convenient, and once you're used to it only takes a wee bit more attention than an coffee machine. If you must have the ease of press a button and coffee! then this isn't for you. But it's easy on energy, easy on use, and makes a great cuppa. Up to 5 stars!
