This 2lb bread machine comes with 12 settings to make bread using different ingredients and recipes. 12 Program Cycles:
For white and mixed breads consisting mainly of basic bread flour.
For light breads made from fine flour. Normally, the bread is fluffy and has a crispy crust. This is not a suitable setting for recipes requiring butter, margarine, or milk.
For gluten-free breads and mixes.
For quick-bread recipes that do not use yeast for rising and instead may use baking powder or soda. Kneading, rising, and baking loaf within a time less than for basic bread.
For breads with additives such as fruit juices, grated coconut, raisins, dry fruits, chocolate, or added sugar. Due to a longer phase of rising, the bread will be light and airy.
Kneading, rising, and baking a 1.5-pound loaf occurs in 58 minutes using a quick-rising yeast. Loaf will be smaller and rougher than that made with the Basic cycle.
Same as 1.5- pound Express, but yields a 2-pound loaf.
This cycle prepares the yeast dough for buns, pizza crust, etc., to be baked in a conventional oven. There is no baking in this cycle.
For making jams with fresh fruit.
Kneading, rising, and baking occurs, but with the aid of soda or baking powder.

The gluten-free setting on this machine (one of 12 settings) has already seen extensive use and it (the machine) is a wonderful addition to our kitchen. It is quieter than we expected and has very little vibration. Clean up is a breeze also. Follow the directions and read and understand the recipe chart in the owners manual. Make several different breads and even rolls from the suggestions in the manual and then have fun creating your own masterpieces. Friends and family will really be impressed with your 'new baking skills'!!
One word of caution; the baking bread will smell so good in your house that it probably won't last long!
I've also googled recipes and tried them to great success. Among others, I've tried basic white, cheddar cheese, whole wheat, sweet hawaiian, oatmeal buttermilk, parmesan, rosemary - all came out great. Even a boxed beed bread mix from Trader Joe's turned out fine. I especially love the delay timer feature as most breads take about 3 hours so I like to go to bed and time it so it's just ready when I'm getting up. It's a nice smell to wake up to and not have to worry about making breakfast.
To my great relief, despite baking pretty much every other day for almost the whole first month, my electricity bill did not change that much, so it must also be somewhat energy efficient.
WARNING: the kneading paddle does tend to embed itself and come out with the baked bread (in other words, it gets stuck inside the bottom of the bread during baking so when you flip over the bread pan to get the bread out at the end, the paddle comes out with it and stays "stuck" inside until you remove it. Careful! The kneading paddle is all metal so it's super hot and to remove it I usually use a clean piece of paper towel or a spatula to pry it out. DO NOT FORGET THE PADDLE INSIDE!!!! If you do, when you start cutting the bread you will hit the paddle with your bread knife and likely scratch its nonstick coating making it unsafe for future use. I ruined both of my kneading paddles (the machine comes with two) that way and had to order a spare from the company (great customer service btw!).
The only other downside is that it does make healthy eating habits harder to stick to. It's just SO easy to make tasty fresh bread and eat half of it that same day!!! I'm imagine that if you're on a diet this is just about the worst thing to have around! I am perfectly fine having chocolate and ice cream and other delicious unhealthy goodies around the house and not indulge too much at all, but with the bread it is much more difficult because it is a "staple" food so it's easier to just say "oh well it's part of a regular meal." So think carefully before you bring such temptation into your life! :)
So that's why it's one star down - but really it's a good little machine overall.
BUT, it has a tendency to vibrate and dance right off the kitchen counter. I have placed rubber mats underneath; I have put a heavy cheese board in front of it but it is determined to commit suicide. And today (11/4/15) it danced right off the counter and died - in spite of all the blocks I put in front of it.
I'll order another one. It's reasonably priced, it makes good bread easily and reasonably quickly. I may just have to leash it to the faucet of the sink or something. But buyer beware...................
