Don't ignore the wisdom in weighing vs. using volumetric measures. All chemical equations are mass-balance, not volumetric. We are so accustomed to volumetric measures in the kitchen, but even Alton Brown, the famous cooking guru of the cooking network, recommends weighing ingredients.
Alan, thanks for a good guide. Don 't understand the reviewer who said there were no recipes. Odd. Perhaps he confused your book for another.
