That said, I do intend to substitute a chickpea faux tofu recipe for firm & extra firm tofu in some of the recipes; as well as yogurt as a soft tofu alternative. I’ll use the substitutions I found (google) for soy sauce @ other soy things too. It’s actually all quite easy to substitute.
I know groc. prices always change & her pricing her recipe won’t be accurate even between regions & different stores on top of inflation over time; but I LOVE that she did the math for all the ingredients including spices so I know which recipes to go to to save the most money. Even w/ changing prices, this can still show which recipes will be the cheaper ones to make & since she shows number of servings, I know which of the cheaper recipes will go farther too! Now as far as cheap, none of these recipes are low grade meals by any stretch. They’re all worthy of wowing friends with! I also love that they’re pretty naturally anti-inflammatory recipes. They’re easily changed (no real experience needed) for allergies or just preferences. Clear, easy to follow instructions & plenty of pictures. No calorie & other breakdown of the recipes if you depend on that sort of thing (diabetics, etc). But these are naturally healthy & low fat & are a good way to lose weight w/o counting cals.
My fav thing tho is the genius of showing the difference in cost per recipe & I wish ALL recipes showed this! Total game changer for those living on meager means & don’t know what to eat to stretch their last dollars w/o relying on ramen noodles & cheap unhealthy stuff from the groc store.
So if you are vegan or exploring more vegan cooking AND looking for low calorie options, I highly recommend this book. Enjoy!
