Aside from the general build, it worked great. I did exactly as the instructions said, just run the knife over the two sharpening grooves 3-4 times each without applying additional pressure and I instantly noticed an improvement. I had a slightly ripe tomato that I tried cutting before and after sharpening and the difference was night and day.
I also used this on a decent nice knife, some Global Santoku pieces I own, and noticed no scratching/blemishes on the metal after use, which I was a little worried about. I will definitely keep this with me for a long time!
I'm thinking that Harcas would be ideal for people with arthritis or other manual dexterity issues because sharpening knives takes no force and is very smooth and easy. Also, it just feels safe.
Does it work? I'm using dull and unused knives that have been sitting in drawers for years. They're as good as new.
The company is astonishingly responsible. They emailed me to see if I was happy with Harcas.
I am not just happy. I am thrilled.
Pulling out the electric sharpener was not always convenient. So I was letting my knives get somewhat dull between sharpenings. I wouldn't use the tungsten carbide rods for my Shun knives, but the ceramic rods (stage 2) do a good job of honing them so that they are really sharp. The tungsten carbide rods should be used more for knives that need to have a new edge to the blade. This would be good for European/American knives. The ceramic rods are great to use for any knife just to keep them sharp.
This sharpener is small enough that I can keep it on the counter and handy. So I tend to use it more often than I would the electric sharpener. I still use the electric sharpener when I have time and feel ambitious enough to sharpen a few knives. It also works really well for the Shun knives that need more than honing to sharpen them.
