Best coconut flour I've tried...

I was hesitant to try this flour as there are no reviews and I've never heard of this brand. I ran out of coconut flour and at the time this was the easiest one to order. I am so glad I got this. I have had to go grain free for health reasons and I'm a retired baker and have struggled for the last 6 years trying to find ways to have baked goods. I have used coconut flour a lot and never liked the smell or taste of it. I just seems off but they all smell/taste that way. Not this brand. It's a raw flour and when I opened the bag it actually smelled like coconut. WOW! It is light and fluffy and just looked good. So I tried my first recipe, pancakes. They were so light and fluffy and tasted wonderful. (Note I do not use just coconut flour I add arrowroot flour too). I can't believe how good they tasted. I am actually excited now to try other recipes with this stuff. So far I am very happy with my purchase.

UPDATE: The company who makes the flour reached out to me. This is why I am changing my review rating. Comuster service is everything to me. Basically the flour was shipped from some other company. I will just freeze for the time being. The flour on the other hand is wonderful.

I just received the 4lb bag of coconut flour and it expires in 3 months from now. I don't want to waste my time and return it and then place a new order. So I'm writing this review to let the customers know. Disappointed, I'm not a bakery that can use 4lbs of flour in 3 months.

I sincerely like this product. Here's why:

1) Packaging was excellent.

2) As far as coconut flour goes, this one is real fresh and packs quite a wonderful scent.

3) I've been using this as a half flour mix with all kinds of muffins. The half that's coconut flour (as opposed to wheat flour) is not meant to be as big since coconut flour absorbs a LOT of moisture.

4) When I bake using this flour, described in above point, it makes the house smell good. I like the smell of this flour baking.

This is the second brand of coconut flour I've tried and I've found this one to work better in recipes. I've found it's best to let the batter sit for about 5 minutes to let the flour soak in the moisture before you bake in order to prevent a grainy texture. Honestly though, the texture of this flour is much better than some I've had.

Note that coconut flour is not like your typical all-purpose flour-it does not have the same consistency or texture so go into this with an open mind.

Wonderful smell and consistency. Nice zip lock bag to keep it fresh. This is a dense coconut meat flour that I have found needs to be used sparingly in baking recipes. This has a heaviness to it that needs to be cut with lighter flours. I think it does taste and smell like coconut and am still trying to find a way to use it in sweet/fruit bread recipes so that it enhances the flavor and is not too rich.

The taste is mildly sweet and really doesn't need any sweetener added unless you are making a dessert. I have bought this item multiple times and will continue to do so.
