Some of the recipes you will find in her cookbook include:
Whole Chicken (see my comments below)
Chicken and Red Potatoes
Note: The USDA does NOT recommend cooking a whole chicken in a slow cooker or crockpot. Use the Whole Chicken recipe at your own risk.
Recommend with caveats given.
My husband is not a fan a chicken and making it always is a challenge. I used this book to gain new ideas. The first recipe I made was the balsamic vinegar chicken. I found it was simple and easy to prepare. I made a bed of rice to go with it. I nervously served my not so chicken loving husband the meal. He loved it as far as chicken goes! I was so happy! My kids liked it also! Ok that was one recipe, I tried a few more.
I found myself not always using chicken breast but chicken parts as well. Legs and drumsticks, breasts and thighs. I have not found a recipe we don't like. My family does not like coconut so I won't try that one but but so far.. success.
Each recipe is easy to follow. There are no pics of what the end result should look like, but that is not important to me. To some it may bother. The dishes are economical and healthy. It beats fried chicken and bbq chicken in my opinion but those recipes are in there also!
Have fun cooking with this book.
I downloaded another similar book at the same time, and it used processed foods-usually cans of soup- to make most of the meals. I really didn't want that. I am trying to get away from processed foods with all of the chemicals in them.
This book was different. I didn't see one can of soup required anywhere.
Several of the recipes looked really great to me, especially the ones involving pineapple juice and pineapple, and also the one involving frozen orange juice, and another one involving sweet potatoes.
If you are trying to become a gourmet cook, look elsewhere. If you are looking for easy, time-saving, healthy meals to get on the table to feed your family, this is the book for you
