I try to avoid single-ingredient cookbooks unless the ingredient is incredibly versatile... chicken, yes, quinoa, not so much. The first time I tried quinoa, I hated it. I couldn't get over its weird little curlicue strings, the taste, or the texture. I thought there might be something odd about me (OK, I KNOW that I'm a little odd....) Given that it was on the Kindle and free, I decided to try it. I've now found a few ways where I find quinoa to be tolerable if not liked. Since the rest of the family thought it was fine, I guess that's a win. However, that was right before I started reading about the controversy involved in the farming and purchasing practices involved with this ancient grain... I do not want to be involved with starving subsistence growers in Bolivia and Peru! I think quinoa will remain one of those once-in-a-while foods for us, so I have removed the book from my Kindle and will keep it in the cloud for future reference.

If you LOVE quinoa, there's a lot here. If you're on the fence about it, it's worth a try. A Kindle book takes up no room on your cookbook shelf and the price is right too. Just don't expect it to convert you if you're not already a fan.

I've been a quinoa fan for a long time but got away from it in my low-carb diet.

The recipes in this book are so well put together and so enticing, I ordered some bulk quinoa and will be diving into test drive Nicki's recipes.

I liked the way that Nicki personalized her recipe book. The stories she shared about her childhood growing up on the farm and her experiences with quinoa in Ecuador helped me understand her interest in this topic.

What a great collection of recipes - they are creative, well presented and sound delicious. It is so refreshing to find a book (cookbook or otherwise) where the author has worked hard to produce a quality product. There are some creative ideas for using quinoa that were great to find - quinoa isn't only for lunch or dinner and the breakfast recipe/s sound so good. If you've not tried quinoa yet, this would be the book to buy - good background on quinoa and its benefits as well as super recipes.

I just downloaded this cookbook and I can't wait to try the recipes. My family loves quinoa and I'm so glad I came across this gem of a book.

My only critical comment is that one cannot advance to a specific recipe from the table of contents. One needs to scroll through all the pages to get to a specific recipe. But TRULY I do NOT mind this slight inconvenience for such such an innovative cookbook.

There is a Kale Quinoa Salad that sounds amazing. Combines two excellent sources of nutrients in a beautiful dish with an Asian flair.

UPDATE: I made the Spicy Ginger Cookies (made with quinoa flour and flax seed flour). They were out of this world; my ten year old daughter devoured them. I have a couple tips: You might want to add just a touch more ground ginger if you like more of a ginger punch. Also, the recipe calls for (optional) candied ginger. We got some, and we put in the recommended amount. Again, we are thinking we will put a bit more the next time we make these cookies. Regardless, these cookies are healthy (only half a cup of brown sugar) and they taste fantastic!

This book lives up to its title. It is stacked full of 30 wholesome recipes that gave me a fresh view on what is possible with this nutritious grain.

My experience of quinoa had been limited to it been a fairly plain add-in for salads and the occasional casserole. This book reveals that quinoa can be used for things like Granola, Pancakes, Muffins and Scones. It can be used for soups like chicken soup and minestrone. And then for mains this versatile grain can make tasty dishes like Quinoa Pilaf with Pine Nuts or Taco Quinoa Casserole followed by desserts like Quinoa Maple Date Pudding or Quinoa Apricot Oat Clusters.

The recipes all use healthy but well known ingredients. The instructions are clear and precise. I would have loved some pictures of these enticing recipes but will certainly be using this book often.

I just love this Quinoa recipe book. It contains lots of great recipes with this healthy seed. I have to remember to rinse the quinoa thoroughly, though. Sometimes I forget in haste. Guess what I will be serving for dinner this evening? The warm quinoa salad with salmon. It looks delicious! Thanks Nicolette Goff for writing this cookbook!

For those of us wanting to become ever healthier in our approach and consumption of food for life, Quinoa is a gift from the gods. To find this book which explains it ever so lovingly and provides incredible recipes that are easy to make delighted me. Who knew from Quinoa in our childhoods, or even five years ago and yet it is a food most can eat and profit from internally and also with their taste buds. For those of us used to wheat at every meal, and just learning that wheat we used to eat is no longer the wheat on the shelves we can find and buy, and our bodies are taking a hit, Quinoa is one of the alternatives so yummy it can easily turn our heads away from that which we knew and loved so well, and into a future of better health with unusually quite heavenly satisfaction. A thorough book and I'm glad it's in my hands.
