High Rising Rye Bread for Lazy People Like Me

I make rye bread from this flour in a bread machine. Two things that seem most important are:

(1) choose a recipe that has more wheat flour than rye flour, and

(2) soak the rye flour in all of the recipe's water the day before you plan on baking.

In my bread machine I weigh in the water, then weigh in JUST the rye flour, and mix the two (a minute or two on the "Cookie Cycle" works well for my machine.) I let that slurry sit overnight with a plastic back covering the pan. The next day I add all the other ingredients (with the wheat flour on top and the yeast on top of that.) Then start the machine with a normal bread-making cycle and let the machine do all the work. I get rye breads that are very light and rise high above the pan. The loaf is not quite as attractive as a free form loaf, but I have barely five minutes of my time in each loaf.

The taste of Hodgson Mill rye flour is outstanding. PS: I wouldn't think of turning out a loaf of rye bread unless lot of caraway seeds were kneaded in and the loaf received a glazing towards the end of the bake cycle.

Important note, this is rough ground, with a texture very like stone ground whole wheat. Making a full loaf from this yields a very dense bread. The gluten in it is different than wheat flour and won't react the same. It is best mixed with other grains to lighten the loaf. That being said, the flavor and aroma were wonderful. It yielded a nice tangy rye sourdough. Well packaged, all six bags were wrapped in heavy shrink wrap and placed in a box nestled inside a larger box. They arrived in great shape.

Use this primarily to make a natural, effective pesticide: Mix heaping tablespoon in bucket of water, let sit for a few days until water turns white, stirring occasionally. Pour around the base of plants/trees, or use in a sprayer. Very effective against whitefly and scale insects. Works topically as well as systemically. My first year using this, I had several very large trees in my yard plagued for many years with raging whitefly, causing all the leaves to crinkle and turn black, and the insect residue turned the bark black as well. I poured several gallons around the base of these trees for several months running and have had no whitefly since!

Flour arrived on time. It's fairly course grind. The price is right, but you need to bake a lot if you order 30 lbs. I've baked whole rye, part rye & whole wheat & pretzels. You need to condition the flour by mixing with the liquid & letting it sit over night or using a cold fermentation of at least 12 hours for the best results. Otherwise you end up with loaves that are like bricks.

My first review was 5 stars. As long as you manage to use all the flour within first couple months, you are good. If not, little bugs start eating it all over the package no matter how well you store it - I simply don't have enough space in my fridge to store 20lb of flour, so I had it stored in well closed plastic bags in kitchen cabinet (each package in a separate ziploc bag). Had to discard 4 packages today due to contamination.
Bottom line - if you purchase 30lb, use it as fast as you can.
