My only complaint was that the recipes I tried weren't spicy enough for my tastes. The cauliflower ferment called for 6 jalapeño peppers with seeds removed. I wish I had left the seeds in or used more peppers. I would have liked more heat. But that's the cool part about fermenting your own food, you can experiment and figure out what works best for you.
