These Hon-Dashi granules are a BIG addition in flavor to miso soup. This soup stock imparts additional savory flavor to the soup and can even be used as a base in other soups as well.

My recipe is usually:
1. 4 cups water
2. 1.5-2 tsp Hon-Dashi granules
3. 2 Tbsp miso paste
4. dried seaweed and/or tofu, as necessary

I boil the water over the stove, add the dashi granules until dissolved fully, then add in the miso paste (breaking apart clumps). Finally, I add the tofu or seaweed.

I strongly recommend Hon-Dashi as an addition to miso soups - the extra flavor is fantastic!

I try to eat miso somewhat consistently, but it was missing something, and making the stock with this put it spot on! Like most Americans I was a tad hesitant with the overwhelming fishy smell that it has, but it is sooooo worth it. Once the miso paste, green onions and veggies were in... soup was perfect!

Great seasoning I use it for sea food and soups. high sodium content so a little goes a long way.The picture give the impression that the jar is larger than it actually is so keep in mind this is actually only 2ozs

when you don't have the time to prepare kombu and bonito flakes, like for a quick bowl of miso breakfast soup, Hon-Dashi really takes just a few minutes to fix. throw in some of last nights noodles, a raw egg, and you are ready for work. It's not quite as good as the real thing, but it sure helps for the quick fix.

This is my favorite ingredient in Japanese cooking. I could make my own dashi but I like to keep it simple. All you have to do is measure out a little with some hot water and you are done. I've seen a lot of reviews where people use it for miso but I usually use it to make soup base for udon or sukiyaki. Sometimes I'll add some when I'm making a pot of rice for some extra flavor. This stuff does have MSG so if you are sensitive to that, just get some bonito flakes and konbu and make your own dashi.

Exactly what I was needing to make homemade miso soup. After I bought this the first time, I ordered a few more before I was even half way through with this stock. I am so excited to make my own miso soup now!

This was great. I made miso soup with it and it turned out wonderful just like at the sushi bar. I simply added a couple of teaspoons to a pot of hot water and added my tofu and miso. I will say however that I wish there were clearer directions on the water to stock ratio. I just did it by taste and that worked out well enough. Quality was great, I was worried it would be too fishy tasting/smelling but it was very subtle and mild. Put it in the fridge after opening.

Small container, but goes ALONG way. You really don't need much in cooking. Has a strong fishy smell, but once you put it into whatever you're making, the smell goes away.
