Cupcake Ingredients:

1/4 cup Hoosier Hill Farm Granulated Honey Crystals
1/4 cup Hoosier Hill Farm Whole Milk Powder
1 stick unsalted butter, softened
1/2 cup granulated sugar
2 eggs
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp salt

1 Tbsp. lemon juice
1 tsp vanilla extract
2 Tbsp lemon zest
1/2 cup water

For the Honey Buttercream Frosting:

1/3 cup Hoosier Hill Farm Premium Honey Powder
8oz package of cream cheese at room temp
1 stick unsalted butter at room temperature
1/2 lb powdered sugar (sifted)
2 tsp vanilla extract

Honey Lemon Cupcakes

Prep: 25 min | Cook 18-20 min | Yield: 12 cupcakes

1: Preheat the oven to 350F, line a muffin tin with baking cups.

2: Using a stand mixer, cream together butter and sugar on medium-high speed. Add in the eggs and mix until combined.

3: In a separate bowl, whisk together the flour, baking powder, salt, whole milk powder, and honey crystals.

4: In a smaller bowl, combine water, lemon juice, lemon zest, and vanilla.

5: Add half the flour mixture to the butter and sugar, until combined. Next, add in the lemon juice mixture, followed by the remaining flour mixture. Mix until just combined

6: Fill baking cups 2/3 full and bake for 18-20 mins

7: Allow to cool before frosting

To make the frosting:

1: Begin by combining room temperature butter and cream cheese in a stand mixer, until well combined

2: Mix in a generous pinch of salt

3: Slowly mix in powdered sugar and honey powder in small batches, until all of the powdered sugar is incorporated

4: Lastly, add in the vanilla, mixing until fully incorporated

Overall we’re very happy with this but was disappointed to learn once we got it that sugar was the first ingredient. The flavor is pretty good overall but you can detect the sugar in there for sure.

It does have the honey flavor we wanted and expected that was perfect for making BBQ rubs and wing sauces it does clump a little you just have to slowly and carefully mix it.

Like every Hoosier Hill Farms item I've purchase, this arrived fresh and well packaged. It was a nice treat with berries, and I'm sure I'll find many other uses. Because it's powdered, it will be easier to use in cooking and baking, especially when measuring. Anyone that's tried using honey in baking and cooking knows how hard it can be to measure liquid honey. This is also a great way to add the taste of honey to fruit or desserts for a nice change from plain cane sugar.
