I learned that the name Paleo originates from the Paleolithic era. The Paleo diet is designed to emulate, using modern foods, the health giving diet of diet of wild plants and animals eaten during this era. The main goal is to avoid the consumption of dairy, grains, legumes, processed oils and refined sugars.
The author says we need to change our thinking about fats. We should not be afraid of them. Rather, we should only choose good fats and avoid bad fats.
The author encourages us to eat more veggies, like our ancient ancestors did. Your plate should be half full of fresh organic vegetables. The other half should contain protein from chicken, beef, lamb or fish. Just add some good fat from avocadoes, a few nuts and fruit and you are on the right track.
The author encourages us to cleanse our body before starting the Paleo diet. She shows us how to shop for Paleo foods (never when hungry and read labels with a magnifying glass). The fewer added ingredients, the better. Purchase only fresh foods, as far as possible and chose organic.
The author also has an interesting chapter on how to cook Paleo. Crock pots are an invaluable appliance.
I learned a lot from this book. Following in the culinary footsteps of our prehistoric ancestors seems to make a lot of sense.
