A roll of parchment paper contains more than twice as much paper as these sheets, so I’d opt for the roll instead of the sheets. Some people have a problem with cutting paper from the roll because the box doesn’t include a serrated metal cutter (to make it greener and more easily recyclable) but it’s not a big deal if you make a fold across the sheet where you want to tear it, and then tear it against the corner of the box.
Both parchment paper and silicone mats are coated with silicone, which is considered safe for contact with food. On their website, If You Care has the following important information about how that silicone is sourced and prepared: “While some baking papers are coated with Quilon, which contains heavy metals like chromium that can be toxic when incinerated, If You Care Parchment Paper uses Silicone, derived from a natural element. It’s a much more expensive process, but one we feel is worth it for everyone.”
Besides the silicone, the If You Care parchment paper is made from FSC-certified paper, without chlorine bleaching, and is packed in a recycled cardboard box printed with vegetable-based inks and stuck together with non-toxic glue. It’s certified for municipal or home composting and is also vegan, Kosher, and not tested on animals.
Overall, I think If You Care, and their parent company, Source Atlantique Inc. (which has a lot of food brands like Baliene salt, Maille mustard, d’arbo, etc.) does a good job at sustainability. They are certified gold by the Green Business Bureau, which if you click on that logo from that website shows you some of the things they do to save energy and reduce waste. They were the first to bring unbleached coffee filters in the U.S., and their recycled aluminum foil touts a 95% energy saving over conventional foil. I think the parchment paper deserves 5/5 gold stars for quality and 5/5 green stars for social and environmental impact. It’s pricey, but as other users have mentioned, you can re-use sheets a few times if you are doing a lot of baking!
