About the Author
I have always loved to cook and have had the pleasure of starting many friends and family on their path to find their "inner cook". I catered for a company that produced television commercials until a job transfer moved me to another city and have written local cookbooks for years. I had not given much thought to producing cookbooks for a larger audience until Amazon came along. I now have the time to devote to the projects and it is going to be a blast.

The Italian Stew, Minestrone Soup and Navy Beans with Greens Soup recipes looked really good to me. There is a great section on Goodies to add to Salad. An excellent Basic Vinaigrette Dressing Recipe with suggestions to spice it up. The cooking tips section includes an excellent tip on cleaning leeks which are difficult to clean properly. I cook and am always learning new techniques and tips. Not being the most organized guy, the work area organization tips will be especially useful to me.
Whether you are an experienced cook or just beginning, there is something for everyone in this book. I highly recommend it.
But I was quickly running out of soup and salad ideas, especially soups that I could freeze, because I really do not have the time to cook up a broth every day.
I was very impressed with the book. There is a great choice to choose from. But more than that, I love it when you can read and feel passion about food in a cook book. Sounds obvious but I sometimes get the feel that people just throw together recipes as part of a conveyor belt 9-5 job.
Not so with Katherine the author. She knows her soups and salads, but really wants to help you make them 'as good as it gets' if you know what I mean.
The tips section for each recipe is useful, but the tips section at the back of the book gives the book another great little extra, and there are some gems in there (well for me anyway).
Most of the recipes are within my 'skill' level, the few that look a bit more complicated I will try as the author promises that I will be well rewarded for my efforts. Great book, thank you.
I really want to try out the potato salad recipe. Can I come to dinner?
I was pleasantly surprised to see a recipe for cornbread baked in an iron skillet. To me, cornbread is the prefect bread to serve with any soup. I'll definitely be trying out the cornbread receipt and Cheddar Cheese and Potato Soup to go with it. Also, the Pinto Beans recipe will be the next one on my list to try. And, then I'm going to try the Tuna and Garden Salad.
This cookbook is laid out in such a manner that each recipe is very easy to follow with nothing left to wonder about. It will work great for the new cook as well as the more seasoned cook. I can't wait to start making all these mouthwatering recipes.
I love the basics, as she calls them. I will be freezing these basics from now on. What a great tip to make a lot of these flavorful extras to have on hand.
The way to make a so much better broth from canned broth will be a staple in my kitchen. I made the cream of mushroom soup and it was an elegant, delicious addition to a dinner party I was giving.
The way she presents her salads is different and makes so much sense, especially if you are looking for nutritional tips. Each ingredient has the nutritional information. This alone makes this book an absolute "Keeper". Buy this book to add to your collection, you will not be sorry.
