This seller has consistently sent out jars that were already opened, broken, or rotting. It’s been too many of them to have been a fluke. I love this paste but can’t keep wasting time and money getting them here. Pay attention to all the 1 star reviews saying the same thing.

My wife's family is from Peru and for a long time, we lived in an area where it was really hard to find typical Peruvian ingredients,

THANKFULLY, we found this on amazon. I would highly recommend using this product for Aji de Gallina or Peruvian Ceviche. its AMAZING!

How to Make It

Step 1
Rinse diced fish and slivered red onion in cold water and dry thoroughly.

Step 2
In a large bowl, combine fish, red onion, lime juice, salt, habanero (if using), and ají amarillo paste. Cover and refrigerate 20 minutes.

Just before serving, stir in cilantro. Divide between 4 bowls and serve with sweet potato, corn, and lettuce leaves on the side.

I ordered two jars. One of the m was leaking some fluid (probably oil). The jar lid was not adequately tightened. I did not touched the second one. This is my second order of this product. The first shipment was just fine, but it came from Dona Isabel. I checked feedback on this one, from Inca's food, and found out that many customers received open/leaking jars. Obviously, the supplied did not take and action to prevent this from happening. This is food to be for safe human consumption!!!!!

EXCELLENT. The NYTIMES published.a great recipe for Peruvian chicken that requires this type (and one other type) of chili paste. I ordered both on Amazon (and reviewed both very favorably). The recipe is a total winner so look it up. Make multiple batches of the marinade & sauce with one bottle of each paste, pop them in the freezer, and enjoy whenever. Seriously delicious.

Save your money! Reviews are correct, regarding seal being tampered with. Received my delivery it was bubbled wrap / tap. I saw a little bit of leakage , thought maybe a little bit of the sauce leaked through, yes it leaked though and seal popped up. Meaning the original seal was tampered with and broken was just bubble wrapped. So disappointed was looking forward to making a popular Peruvian dish!
:( Don’t trust using the sauce!

Terrific- slightly spicier than the other brands I have tried, although this is not really a spicy paste in general ( not my version anyway). Absolutely wonderful on a 10 hour cooked crock pot pork loin. Just plop in the loin, dump the whole jar over the meat, and heat it on low for ten hours. It will fall apart when it's done, and taste terrific over rice, sliced cooked potatoes, bread, whatever. I like strong flavors, so I added a hint of Trader Joe's salt, garlic, pepper blend and a sprinkle of crushed red aleppo pepper. It was divine. You could use just this alone, really. Sprinkle on a few scallions before serving it.
