Product Description

***WHAT IS ENSO?*** An Enso is a circle painted in one stroke in Japanese calligraphy, it symbolizes many things; perfection, strength, elegance, single mindedness and the state of mind of the artist at the moment of creation. With these qualities in mind Enso Knives presents the Enso Kimura, 3.5-inch paring knife.

***MADE BY MASTER CRAFTSMEN WITH CARE AND ATTENTION TO EVERY INDIVIDUAL KNIFE.*** It takes quality materials and a master craftsman to forge these knives and to ensure your knife will retain its edge much longer than mass produced stamped knives made with inferior steel and of inferior quality. Our steel is imported from Japan and the knives are handcrafted in China. The Enso Kimura is sharpened to a razor sharp 12 to 15 degree angle, this is not possible using inferior steel. Our quench and temper process produces an incredible HRC hardness of 60+/-2. Only the highest quality knives, usually priced well over $100 can compare to this! Don't settle for a knife that won't keep its edge and won't have the durability to last a lifetime!!

***CLASSIC BLACK PAKKA WOOD HANDLE*** with a slight curve that provides extra stability, a firm non-slip grip and a touch of class. Pakka wood is known for its incredible durability yet has a beautiful and natural grain.

***A CLASS ACT FROM TIP OF BLADE TO STAINLESS STEEL END CAP*** The blade is etched with a traditional Japanese Enso circle and the Enso Logo. An elegant end cap adds the finishing touch to this beautiful and functional piece of kitchen artistry. Enjoy your kitchen creations. Enjoy your ENSO!

I have never had nice knives. I believe if I had a knife like this prior to now, I would have done a lot more cooking in the past. This knife is amazing! This is a great kitchen essential, perfect for doing fine detailed work, peeling fruits and vegetables, or scoring designs onto the surfaces of foods. And more! Paring knives seem to be one of the essential knives for the kitchen. I was amazed at the precision of this knife. I was able to slice my peaches super thin, without cutting myself like the clutz that I am, and in record time! This knife is so easy to use it hardly took me any time at all to cut up four peaches. (I purchased 10 pounds for $1.29 and I have to get them frozen somehow, sometime, this will make this process super fast!) I also cut some of the slices into thin rectangles to see if I could do it. Wow!! (See photos.) I tried my grape tomatoes next. I don't generally do anything to grape tomatoes except for eat them whole or maybe cut them in half. I decided to try to do thin slices of the grape tomatoes. And again, wow!! I did that to a few, then the rest got cut into 4's. Then came the hard boiled eggs. I know eggs don't have to be precisely cut for egg salad, but since I had the knife out, and I had hard boiled eggs made, and it was just about lunch time.....:-D So I cut up some eggs. I didn't make as precise of cuts as the first grape tomatoes and the peaches, but this took me FAR less time than I ever thought possible. I would never have had the patience to make egg salad in this way with any knives I have ever owned. No way! I had lunch done before I knew it! I have so much more to cut now that I know how easy it is with this knife to do all sorts of things.Read more ›

This knife! This is my first knife made with Damascas steel and I am sold. I love the pattern in the metal, and it is SOLID. It comes in a nice black storage box that has a magnet inside to keep it closed. It has a very professional appearance.

Pros:
-Cuts so smoothly. I used minimum force chopping potatoes.
-Very sharp. I took it nice and slow while cutting, since this knife is so sharp.
-Is well weighted for my hand. Not too heavy, not to light. It felt perfect.
-Cleaned up very easily; however, I cleaned immediately after use.

Cons:
-Not a fan of the black pakkawood handle. I've never seen black pakkawood in person and now that I've seen it, it isn't a grain that I like. (This is just a personal opinion - the only con I could come up with!)

Overall I am happy with this purchase. This knife makes a great addition to my knife block! I'm looking forward to potentially purchasing the Santoku or Chef knife next. I received this product at a discount in exchange for my honest, unbiased, and genuine opinion.

Everything about this knife is top notch! When it showed up in the mail, I was first blown away by how nice the box is! It's sleek and presentable. Opening the box, you see the knife, wrapped in plastic, sitting inside a form fitted slot. On the box lid, it explains what the knife is made of (Japanese super steel) and that each knife is made up of 67 layers!

About the knife itself: I really like that the steel goes from the sharp blade into a thicker section toward the handle. This is different than many other knives in that this design stops you from breaking your blade off of you put the wrong amount of pressure on it (because let's face it, we've ALL broken a blade off before.) the handle is ergonomically designed and fits comfortably in your hand. And of course, it's very sharp and cuts well! I first used my knife to cut and core jalapeños and it worked wonderfully for getting into the little crevices to remove the seeds.

There is one negative for me though! For such an expensive and well made knife, I was disappointed to see that the writing on the front of the box is crooked! The box itself is such a nice quality and I would consider these knives to be an excellent gift idea, but one could easily question the validity of how great these knives are if it comes in a box with wonky writing! (Anyway, I still gave a 5 star rating however, because I'm not sure if I maybe got a badly printed one for if it happens often.)

I was fortunate enough to get this knife at a discount in exchange for my review but I was not influenced by the discount or the seller to rate it the way I have. Everything I've said is my own honest and unbiased opinion

Size: Santoku Knife 7-Inch
Length: 1:49 Mins
This is my dream kitchen knife. I've watched my share of TV commercials and demonstrations at the fair of knives that are supposed to cut everything, only to get them home and find out there's a trick twist to your wrist that you have to do, or a special way to clean them, or after only a few uses they simply dull up. Well, I've had this knife for a week now and I've put it through a number of tests, and it slices quick and clean first time, every time. It slices tomatoes, onions, meats, vegetables—everything with equal power and clean cutting. It washes with soap and water. It's a heavy knife and it feels good and fits well in your hand. If I could give it more stars than 5, I would. I received a sample of this product at a discount for my honest unbiased review.
