USING the WHOLE NUTMEG was a mystery to me since this is my first time. I was just grating the entire nut -which wasn't awful. What I learned from a cooking website is that the proper way is to "take your whole nutmeg and crack the shell open by smashing it. I find that pressing the nutmeg on a wood cutting board with the flat edge of a knife the best way to crack the shell." Alrighty then.
I also learned that the outer part (before you crack the seed) is what's called Mace. I actually have some ground mace from a place here on Amazon and I LOVE it. Apparently, it's the inner part of the seed that is the nutmeg part. Who knew?
Cracking the nutmeg is almost impossible using a little hammer (and not trying to damage my counter or floor), but squeezing it is easier. Just be careful to place the tool and seed inside a baggie before squeezing so that nutmeg doesn't fly all over your kitchen. Yep, I did this. The upside is that my kitchen immediately smelled AMAZING.
I am not sure if the inside of the seed is supposed to be softer or not (mine wasn't) but it was just as hard as the uncracked nut while I was grating it.
GRATING it is not awful, I didn't have a special tool so I used the little grater that came with a set. It might even be the right tool because it's too small for me to use anything else. To be honest, I had been using it to prop up pans when my burner was crooked...
The OUTER part when I grated some into my coffee was nice. Very mild but nice. Once I cracked open the seed the grating was slightly easier. The smell is so good that I understand now why using the whole over ground is a good idea.
What surprised me - once I learned how long these will last and how to use and store them - is the value. Even though this is the first time I have bought whole seeds, based on the fragrance when I cracked the seed, these must be really fresh. If they aren't, I can't imagine how much more powerful they would be. These are fine as is in my opinion.
I learned a lot about nutmeg just from a simple search online and there is some surprising info out there about it. Just learning about the supposed benefits - antioxidant, anti-inflammatory, has antibacterial properties; also could be good for heart health, libido, etc.
What I hope people are careful about is that, while there are a lot of benefits of using nutmeg, to be careful with it around children or when used in high amounts. Look up info about potential harmful effects.
I am really happy with this batch of seeds. They are going to last me for a long time but, when I need to buy more, I would most definitely use this seller again

Pkg contains a lifetime supply for avg home baker, u use so little. Best Stored in air-tight glass.
Experienced using whole nutmeg by American name-branded spice co’s from the supermarket (these i’d use 1/2 measure called for). Once tried, I knew I’d never buy pre-ground again, its an apples and oranges comparison.
-Whole: use microplane to grate fine flakes over batter, uses far less (1/4-1/2 than recipe calls for) since the floral notes remain intact far longer
-Pre-ground: if lucky to get fresh (=expensive) jar, loses its vital oil notes by about 6-8mo. Used to omit b/c of that. not anymore, whole’s the only way to go
