Properties of Mace:

Mace comes from the same plant as does nutmeg, Myristica fragrans. Nutmeg is the seed of the tree, whereas mace is the dried "lacy" reddish covering (aril) of the seed. Mace has a similar flavor to nutmeg, albeit slightly less sweet and more delicate. Mace is sometimes preferred in light dishes for the bright orange hue it imparts.

How to use Mace:

Mace has a flavor described as a combination of cinnamon and pepper. It is often used in baking to flavor cakes, puddings and desserts, as well as cheese dishes, soups, sauces, poultry and fish. Mace figures prominently in Indian, Caribbean, Moroccan, Asian, Dutch, French and British cuisine. The whole mace can be ground in a spice or coffee grinder prior to cooking. A mortar and pestle would work admirably also.

Mace Colcannon

INGREDIENTS

  • 1 pinch mace, ground
  • 1 cup milk
  • 2 leeks
  • 1 lb potatoes
  • 1 lb cabbage (kale optional)
  • 1/2 cup butter
  • salt and pepper to taste
INSTRUCTIONS
  1. Boil cabbage until tender in a large saucepan.
  2. Remove and chop well.
  3. Set aside and keep warm.
  4. Boil potatoes until tender.
  5. Remove from heat and drain.
  6. Chop leeks (green parts and white) then simmer until soft in just enough milk to cover them.
  7. Mash and season potatoes well.
  8. Stir in cooked leeks and milk.
  9. Blend in cabbage (or kale) and heat until the mixture is pale green.
  10. Make a hollow in the center, pour in butter, mix well.

Mace Blackberry Cobbler

INGREDIENTS

  • 1 pinch mace, ground
  • 6 tablespoons cold butter
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups white sugar, divided
  • 1 cup all-purpose flour
  • 1/4 cup water, boiling
  • 1/4 cup water, cold
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 4 cups fresh blackberries, rinsed and drained
  • vanilla ice cream (optional)
INSTRUCTIONS
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with aluminum foil.
  3. Mix mace, flour, 1/2 cup sugar, baking powder and salt in a large bowl.
  4. Cut in butter until mixture has texture of coarse crumbs.
  5. Stir in 1/4 cup boiling water just until mixture is evenly moist.
  6. In a separate bowl, dissolve the cornstarch in cold water.
  7. Mix in remaining 1 cup sugar, lemon juice, and blackberries.
  8. Transfer to cast iron skillet and bring to a boil while stirring frequently.
  9. Drop dough into the skillet by spoonfuls.
  10. Place skillet on foil-lined baking sheet.
  11. Bake 25 minutes in preheated oven until dough is golden brown.
  12. Permit to cool and serve with ice cream if desired.

Mace Sauerkraut Balls

INGREDIENTS

  • 1/8 teaspoon mace, ground
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 cups sauerkraut, drained
  • 4 tablespoons vegetable oil
INSTRUCTIONS
  1. Sift together mace, baking powder, flour and salt.
  2. Combine eggs, milk and melted butter in a medium mixing bowl.
  3. Stir the flour mixture into the egg mixture until smooth.
  4. Fold sauerkraut into the dough.
  5. Heat 4 tablespoons of vegetable oil in a large skillet.
  6. Drop sauerkraut dough by the teaspoonful into the hot oil.
  7. Fry until the balls are browned on all sides, approximately 2-3 minutes.
