How did I ever live without it?
There's a reason your fried chicken at home is just not the same. Frying in oil has about a 25°F window between too cool to not soak into the coating and too hot to where the outside cooks too much faster than the inside (resulting in either still-pink chicken or burnt coating). Oil also cools down a lot while cooking a batch, so it has to heat back up between batches.There are no holistic methods that are truly reliable. This is. I've been frying boness, popcorn-style chicken with it, getting my oil to around 360° (no parts of the pot lower than 350° nor above 370°), and the results are a delight. I never get soggy breading, and when I check a piece, as the outside turns gold (it will continue to brown, after you take the chicken out), the inside is always perfectly done. My picture should speak for itself!I also use this to accurately heat twice-filtered water to just under 120° before adding it to the yeast and sugar in a hot-water-heated mixing bowl for baking bread. The yeast monster will gobble you up!
