Heidi Krahling has been passionate about Mediterranean food since growing up in Southern California in a large Italian family. The recipes in this book speak of her major culinary influences—her father, Italo; Mary Risley, the founder of Tante Marie’s Cooking School; and Joyce Goldstein, the chef and owner of Square One Restaurant in San Francisco. Insalata’s cookbook is filled with sumptuous recipes that Heidi has tantalized her customers with for 13 years as chef and owner of Insalata’s in San Anselmo, California. You will find it hard to resist this enticing collection of more than 120 recipes with a foreword by Annie Lamott. Along with the recipes, Heidi explains how she fell in love with Mediterranean cuisine and how you, too, can learn the “principles of flavor” to create luscious dishes that are the perfect accompaniments for gatherings with family and friends. Starting with recipes Heidi shows you how easy-to-find, thoughtfully seasoned, Mediterranean ingredients will delight. Insalata’s cookbook will not only be a feast for your taste buds but also for your eyes—the recipes are paired with the vivid, sensuous artwork of Laura Parker, whose work also adorns the walls of Insalata’s.

However, I love to cook, and couldn't have been happier when Heidi finally released this, her frst cookbook. I have tried many of the recipes, and each and every one has worked beautifully, and more importantly, tasted delicious! Try any recipe and I'm sure you won't be disappointed. Some are very easy, others a bit more complicated or time consuming, but worth it. Some of my favorites are her Taramasalata dip, Fattoush Salad (adding grilled chicken slices for a great, light summer meal), Spanish Tortilla with Salsa Verde (a must to include with the tortilla, aka frittata), Israeli Couscous Salad, Grilled Salmon Fillets with Catalan Pine Nut Relish, and my very favorite Estofado Catalan (beef short ribs with a yummy, rich sauce that includes unsweetened chocolate). Though I'm not a great baker, her desserts are delicious, and I did make her famous Chocolate Pecan Toffee, which is addictive! BTW, her Mom's Roasted Peppers, served alone or as a topping for Warm Goat Cheese Bruschetta, is amazingly simple and delicious!
This is a must to add to your collection if you love great food and love to cook! And no, I am not related to Heidi, but wish I was!
