Most IP recipes use either QPR (quick pressure release) at the end or NPR (natural pressure release). This can be a BIG DEAL depending on what you cook, because foods like rice may become mushy and disguising if pressure is released naturally (meaning, longer than necessary).
Example: I cook white rice for 4 minutes + 5 minutes of NPR. This means that I have to be at the pressure cooker at the RIGHT TIME, 5 minutes after the pressure cooking is done, to release it manually.
Given how many pressure cookers are on the market, Instant Pot HAS NOT PRODUCED a single model with a programmed NPR. Imagine how easy it would be: I would set:
4 minutes cooking
+ 5 minutes NPR
..starting in 2 hours (i.e. when I come back home from a gym)
DONE!
I was hoping that this fancy model would FINALLY have a programmed NPR. But somehow it does not.
2. Now, let's talk about the "bells and whistles":
- Touch Screen - It is definitely nice to have and looks very impressive. However it is not my selling point. I am perfectly comfortable with traditional capacitive sensor buttons. The Pot is just a TOOL, not a subject of love and adoration.
- Steam Release - The remote valve release can be useful for those of you scared of steam release. Well, I use my IP safely :), so this is not in my "worries list".
NutriBoost technology - sounds gimmicky. C'mon! It's just a pressure cooker. The food will be cooked no matter what.
15psi - 15psi of pressure vs regularly used 11psi is not a big of a deal. My food cooks fast enough already. What is more important is that it can be programmed. So that I would not baby sit the pot at all times.
- Sous Vide Program - yes, that is a nice feature. But... I use IP for PRESSURE cooking 95% of the time. I use SLOW cooking 5% of theim time (for things like stews, beans, some meats, etc.)
How often will I use this fancy "Sous Vide" thing? Probably not more than 1% of my cooking time. Besides, it requires using a plastic bag. Yuikes!
CONCLUSION? In my opinion all of the above diminishes the value and makes it NOT WORTH $150-200 sticker price. I would rather buy any of the cheaper models. OR I would wait before they release the newer, more versatile, model.

The only thing that I don’t like is how you have to double up on the seasonings. If you don’t, your food will be very bland!
But all in all, I’m looking forward to working with more of the settings and trying more things, such as making yoghurt!

Tiene pantalla touch agradable y sencilla, asi que me parece buen detalle
No tiene tantas opciones como la ULTRA, asi que se tienen que saber los tiempos o calcularle, la Ultra por ejemplo tiene ya las opciones predefinidas para varios tipos de cocción sin tener que calcular.
Esta MAX trae su propia hoja dentro del paquete que indica los tiempos de cocción de diferentes productos los cuales he comprobado algunos y realmente estan fuera de la realidad, un ejemplo son los frijoles negros, los tiene que se cocen en un tiempo de D: 16 a 20 mins o S: 5 a 7 mins y realmente tarda como 50 mins como minimo... asi que solo es cuestion de calculo.
Lo negativo si es que se puede considerar asi:
- El pitido de final de cocción es muy bajo me gustaria que se pudiera regular el sonido.
- No es Wifi
De lo demas es una olla excelente.
Este modelo MAX, me encanta porque es touch y puedo programar la ventilación automática, lenta o nula, desde un principio, así no tengo que estar pendiente, y evitas el riesgo de tocar el área de vapor.
Pero sí creo que al trabajar con 15psi , tarda más minutos en precalentar . Si vas a cocinar varios platillos seguidos, ejemplo, primero arroz y luego verduras, es importante considerar que te llevará mas tiempo.
One thing that I noticed which was annoying me at first is that most Instant Pot recipes that you find tell you to put the setting to "high", but this pot has a "max" setting and I wanted to take advantage of that. I did finally find out that you can adapt recipes by multiplying the time for a "high" setting by 0.8 or 0.9. Use 0.9 for foods that are dense, use 0.8 for foods that aren't as dense. Gotta love saving that extra time!
