The price was right - $59.99, my Prime made it ship free and the InstantPot arrived almost instantly. I'll admit it, when these things came out I thought it was yet another piece of kitchen electronics that would sit in the cabinet gathering dust bunnies.
I was so wrong. So far I have used it every night for dinner and almost every morning for oatmeal or grits. The first night I realized that I didn't have anything defrosted for dinner and the family would be getting home from work dying of starvation. A quick look online and I found that I could cook from frozen and I threw in a couple pounds of chicken breasts, thighs and legs along with a couple of large sliced onions and a jar of barbecue sauce and set the timer and ran away. (OK, way back about 50 years ago Mother had a pressure cooker blow up in her kitchen and since then I've been leery of the things.)
I let the cooker do it's thing and when it had finished I made up the rest of dinner. Since I let it do its own thing, the pressure released after it cooked and all I had to do was put food on the table and keep my hands out of the way of the ravening hoard.
The next night I threw in dried beans, broth, onions, a little garlic, bay leaf and a couple of ham hocks and by the time the family was ready for dinner, so was the navy bean soup. All of the beans were soft and well cooked but still holding their shape.
The ONLY downside to this particular model is that the top gets really hot (the metal part) and I burned the heck out of my arm one night. I have noticed other models have a bit better design to keep from my flesh becoming blistered, but rather than buy another, I release the steam (with a long wooden spoon), put a folded bath towel over the metal part on the lid and open it up. If it doesn't open easily, more pressure needs to be released so I just leave it to do its thing while getting the rest of dinner on the table.
My sole regret is that I didn't buy one sooner.

I am late to the instant pot party. I honestly didn't see why I would need one and I was always afraid of pressure cookers. My aunt's kitchen ceiling was decorated by the number of times it exploded. But now I am home all day (you know, the pandemic) and I looks like I'll work from home until I retire. Don't get me wrong, I am grateful for the work. But I had to bring half my office home and I have sh*t everywhere. It's a small NY apartment which heats up when you turn on the stove -no central AC either. So after putting on 10+ lbs of pandemic eating, I went on a healthy eating program. Steel cut oats, quinoa, things I didn't eat before. This pot makes those things in a flash and didn't heat up the place. I always forget to thaw frozen meats... I threw a frozen hunk of chicken thighs in it and presto, 30 mins later perfectly cooked chicken. Do you NEED this? No, but I'm finding new uses for it daily. You can't cook everything in it hence on star off of versitality.
