I mostly use it for sous vide. Fill it up with as little hot water as needed to cover whatever you want with an inch or two of water. While it's heating up the already hot water, prep the food, season, and vacuum seal. Sous vide is stupidly simple. There's no burning, because the temperature is slowly controlled, things heat up precisely every time. You can appreciate the differences between meat cooked at 138, 140, and 145 degrees. That said, if you're doing meat you should sear afterwards. Either in a pan or blow torch. A butane blow torch is cheap and sears within a few seconds. You want to sear the outside as the surface being heated to above 280F is how you get the delicious maillard reaction to take place, where proteins, sugars, and salt combine in mysterious ways to make delicious brown crispy things.
With this and a classic instant pot, you can fairly effortlessly make multi course meals with minimal cleanup. Sous vide a meat/main dish in 5 minutes, when that's almost done throw some stuff in the instant pot to finish off quickly as a side. Sear the meat with a torch, plate and your cleanup is just one instant pot and throwing away the vacuum bags.
I managed to purchase this on sale during an Amazon for cheap. There are larger, more powerful sous vide things out there. If I was paying full price and only wanted to sous vide, I would strongly consider buying just a sous vide cooker and basin for about the same price. But on sale, and for other purposes, this is fantastic.
It's not you classic instapot pressure cooker. But dont let that stop you.
Full disclosure, I thought I found a cheaper instapot classic. I have all the models of instapot
First off super easy to clean = really
You can make rice , to stew. , chili to roast beef.
Sadly I haven't found even the YouTubers using this amazing product.
There is a saute option that works really well.
The time is the best part. I'm jewish orthodox and on the sabbath you can't use electric or cook. All had to be done before the sabbath.
A very traditional meal on the sabbath day is called cholent . ( like a meat stew. )
Here is what I do before the sabbath Friday.
1. Saute onions with oil it's a half hour by default so don't forget to mix ingredients.
2. I take the neck bones and saute
3. Then I cut up the potatoes
4. By now the saute is done
5. I add all the rest ingredients ( barley , more oil , paprika , salt and pepper, water ( I use beef broth )
Ok now the best part
Once you have all ingredients together set it to stew you can vary times I use 2 hours
The cholent after 2 hours of stew is perfect!!!!
Right before the sabbath I give the stew a mix and set it to slow cook. You can choose to cook for up to 24 hours . Which is something a crock pot can't do.
I have people rave about my aura instapot. Spread the word. Maybe others will join us

Above certain temperatures you can mess up your recipe. Below certain temperatures you can mess up your cooking. SO why not let the user see what is actually happening? It is called transparency. In cooking it is called quality control. And most cooks are well served by know when in the cooking cycle and at what temperature a food is at.
A very sad engineering oversight.
This becomes more dangerous when the wrong temperature -- too low for too long -- can actually create the perfect environment for culturing bacteria. I was shocked to learn this the hard way.
I was cooking a SLOW cook menu. I set the SLOW cook time to 3 hours, I set the temperature to 175 degrees.
Yet 2 hours into the cooking cycle, I noticed there was no simmering yet. So I placed the thermometer into the stew and at the end of two hours this SLOW cook cycle was only operating at a temperature of 107 degrees ! ! ! !
Think about that. The user expects a 3 hours SLOW cycle and for 2 long hours there is no cooking going on whatesoever1 Worse, the slight temperature rise from room temperature to 107 degrees has created an optimum environment for the rapid growth of bacteria. This is a major consumer safety issue. SLOW cook is not safely accomplished in this manner. Food should always brought into a safe zone – yes, even SLOW cooked food – as soon as possible. Temperature should have reached at least 135 to 145 degrees – and even safer to 165 degrees before the SLOW cook stabilizes. Please don't be fooled by the way INSTANT POT interprets the term SLOW COOK. They mean NO COOKING for most of the SLOW cooking cycle. In fact, they mean dangerous environment for stimulating the rapid growth of bacteria for most of the cooking cycle.
I called there technical support on this issue. Their technical support team was unaware of any such food safety requirement!! Their techncial support team said that SLOW cook just meant slow cook.
Too many engineers. Not enough cooks involved.
They said they would bring this up to appropriate persons and get back to me. They have not gotten back to me.

However, the baking function was a disappointment as the contents of the slow cooker burned at the bottom. One star off for that, since I did not really buy it for that.
The device looks complicated, but operation is very intuitive.
